Basil Chicken Rice Noodles

Stir-fried chicken with basil and capsicum over rice noodles. Pantry cooking, quick.

About this recipe

Ground chicken stir-fried fast with capsicum, onion and spring onion, then tossed through hydrated rice noodles with a fistful of basil thrown in at the last second. The dish reads as Thai-Chinese pantry cooking at its quickest, somewhere between a pad krapow and a Cantonese chow fun.

Thai basil (the licorice-scented variety with the purple stems) is the right choice if you can find it; the heat in the wok releases the oils and gives the dish its signature aniseed perfume. Italian sweet basil works as a substitute but reads softer and rounder, less savoury.

Get the wok smoking before the oil goes in. Ground chicken cooks in 90 seconds; the trick is to break it up hard so it browns rather than steams in its own liquid. Vegetables in by hardness, sauce of soy, oyster and a touch of sugar just before the noodles, basil right at the end off the heat so it wilts rather than fries.

Serve in deep bowls with sliced green chilli on top and a wedge of lime on the side. A Singha or a Tiger beer alongside; the dish is hot enough to need the cold. Twenty minutes from chopping to eating.

Ingredients

- 250gm ground chicken breast

- 1 bell perpper (whatever colour) and julienne (can use any veg you like)

- 2 ea Spring onion, chopped

- 1 Onion , julienne

- 2 Garlic cloves, sliced

- 1 whole green chilli, cut down the centre lengthways

- ?? Rice Noodles, dry rice sticks (hydrate first)

- 10ml Light soy for seasoning Noodle

- 60ml Oyster Sauce

- 10ml Dark Soy

- 10mk Light Soy

- Corn starch Slurry (tbsp corn starch mixed with 1 cup water)

- Handful of Basil

Method

1. Pre-heat frypan and add 1tbsp of vegetable oil

2. Saute 250gm of ground chicken Breast

3. Once chicken starts to cook through, add spring onion, onion and garlic

4. Add Chilli and continue to cook for 4-5mins

5. Heat a 2nd pan, add2 tbsp oil and when super hot, add Noodles, and keep moving so they don’t stick together.

6. Once the noodles have crisped up slightly on the outside, add the peppers, and then season with Light soy, cook for another 2mins.

7. To the chicken sauce, add Oyster sauce, Dark soy and light soy and a slurry of Corn Starch, and stir through and bring to boil.

8. Place noodles on the plate.

9. Remove the sauce from the heat, and then added shredded basil, and spoon over the noodles.
