About this recipe

Spiced beef mince rolled tight in betel leaves and grilled until the leaves char and curl, releasing a savoury, almost peppery smoke. Eaten hot off the pan with mint, coriander, fresh ban hoi noodles and crushed peanuts, dragged through nuoc cham. A Saigon street-grill classic that drinks well with cold beer.

Betel leaves (la lot) are the heart-shaped, glossy dark green leaves of Piper sarmentosum, a relative of the pepper vine. The leaves have a peppery, slightly metallic flavour that intensifies dramatically when grilled; the char on the outside leaves contributes most of the dish's signature smoky-pepper depth. Sourced from Vietnamese grocers; substituted with vine leaves or perilla in an absolute pinch.

The filling is the Vietnamese seasoning template: minced beef (Farm 88 here), lemongrass minced fine, garlic, shallot, fish sauce, sugar, pepper. The mince has to be properly seasoned and rested for thirty minutes so the flavours penetrate before rolling; underseasoning is the death of this dish.

Roll tight, secure with a toothpick, brush with oil, grill over high heat for two minutes a side until the leaves blacken and the inside cooks through. Serve immediately with fresh ban hoi noodles, sliced cucumber, mint, coriander, perilla, lettuce leaves and crushed roasted peanuts. Wrap a roll, herbs and noodles into a piece of lettuce, dip in nuoc cham. Cold Saigon beer alongside.

Ingredients

- 1 bunch of Beetle Leaves

- Toothpicks to secure rolls

- 2 tbsp Extra Virgin Olive Oil for cooking

- 200g Fresh Ban Huoy

- 2 cups of Mint, Vietnamese Mint, Coriander, Shiso Leaf

- ½ cup Nuoc Charm dressing - see separate recipe

- 2 tbsp Peanuts unsalted, roasted & crushed

- Sprinkle of fresh shallots

- Beef mix

- 500 gm Tasman Butcher Farm 88 Beef Mince

- 2 Spring Onions finely chopped

- 2 Red Chillies, finely chopped

- 1 clove Garlic, finely chopped

- 2 tbsp Lemongrass, finely chopped, white part only

- 2 tsp Ginger grated

- 2 tbsp granulated White Sugar

- 1 pinch five spice

- Handful of fried garlic

- 1 red onion

- a few Beetle leaves - shredded

- 1 tbsp Ayam Fish Sauce

- 1 tbsp Ayam Sesame Oil

- 1 tbsp Ayam Oyster Sauce

- 1 tsp White Pepper

Method

1. Wash and drain the Betel leaves.

2. Place the Farm 88 Beef Mince into a large mixing bowl and add all remaining ingredients. Mix well to combine, cover and refrigerate for 30 minutes.

3. Place one Betel Leaf on the workbench with the pointy end facing away from you and place one heaped tablespoon of the mixture along the length of the Beetle Leaf leaving a gap at the bottom and along the sides. Roll, to firmly enclose the filling then secure with toothpicks, repeat with the remaining leaves and filling.

4. Lightly brush the Beef rolls with Oil then cook on Braun MultiGrill 9 Contact Grill (CG9160SL) or a hotplate for approx. 8 minutes turning regularly until lightly charred and the Beef Mince is just cooked through. The rolls should be firm to the touch.

5. Serve with the soft warmed Ban Huoy, Nuoc Cham, Fried Shallots, Peanuts and Fresh Herbs.
