About this recipe

A 1.5kg brisket rubbed hard with ground coffee, smoked paprika, garlic powder, roasted cumin and coriander seeds, set with honey for a sweet glaze. Wrapped tight in baking paper and foil, cooked low and slow over gentle heat for four to five hours. Texas-style discipline, kitchen-pan version.

The ground coffee in the rub is the texas barbecue trick worth importing. Coffee's bitterness and roasted aromatics deepen the meat's natural beefiness; the slight acidity also helps tenderise the connective tissue over the long cook. Use a dark roast, not espresso; espresso is too acidic and goes sour against the smoke.

The wrap-in-paper-then-foil technique (the Texas crutch) is what gets a home oven or smoker to a brisket result without the dedicated 12-hour pit. The paper allows enough air through to maintain the bark; the foil retains the moisture and accelerates the cook past the stall, the temperature plateau around 70 degrees where evaporative cooling brings progress to a halt.

Rest the brisket for at least an hour after cooking, still wrapped. Slice across the grain into pencil-thin pieces; the slice direction makes the difference between tender and chewy. Serve with pickled gherkins, hot mustard, soft white rolls and a cold lager. The kind of meat that justifies an afternoon's commitment.

Ingredients

- 1.5kg piece of brisket

- 1 tbls ground coffee

- 2 tbls honey

- 2 tbls smoked paprika

- 1 tsp garlic powder

- 1 tsp ground roasted cumin seeds

- 1 tsp ground roasted coriander seeds

- 1 tbls salt

- 1 pinch chili powder

- 100g pickled gherkins

- 100g Dijon mustard

Method

1. Mix all the ingredients together. Coat the brisket. Wrap the meat in paper and foil very tightly. Cook over a gentle heat for 4 - 5 hours. Serve with pickles and mustard

2. Poached rhubarb, rice pudding, lemon verbena

3. 1 cup Arborio rice

4. 2 cups full cream milk

5. 1 dessert spoon brown sugar

6. 1 sprig lemon verbena

7. 4 pieces rhubarb (washed and cut into batons)

8. 3 dessert spoon water

9. Put the milk, lemon verbena, rice and sugar in a pot and cook for 35 -40mins stirring occasionally. Char the rhubarb on the BBQ then wrap in foil with a little water and pinch of sugar. Cook for 3 minutes take off the heat and leave to steam in own juices for 5 minutes. Serve the rhubarb with the hot rice and some of the rhubarb cooking syrup.
