About this recipe

Toor dal simmered with turmeric and finished with a double tadka of mustard, cinnamon, curry leaves and dried chilli, the spices crackling in hot ghee right before serving. A Gujarati comfort dish, often eaten with hand-rolled wheat squares cooked through the dal. Sweet, sour and warming all at once.

Dal dhokli is the Gujarati one-pot comfort meal that sits across the household repertoire from Ahmedabad to Surat. The dhokli (small squares of seasoned wheat dough) cook directly in the dal, absorbing the spice and the slight sweet-sour character that defines Gujarati cooking. The sweetness comes from jaggery; the sour from kokum or tamarind; the warmth from the toasted whole spices in the tadka.

The double tadka is the structural ingredient. The first goes in early (mustard seeds, cinnamon, cloves, dried red chilli bloomed in ghee) and forms the foundational aromatic base; the second goes on at the very end (more mustard seeds, curry leaves, fenugreek, asafoetida) and adds the fresh-hit-of-spice that defines the dish as it lands on the table. Both tadkas use ghee rather than oil.

Gujarati cuisine's distinctive sweet-sour-spicy triangle (the three corners of the regional flavour palette) comes through most clearly in this dish. Jaggery dissolved into the dal adds the sweet; tamarind paste or kokum the sour; the chillies and the warm whole spices the heat. Adjust each in small amounts until the balance reads right. Serve in deep bowls with a spoonful of plain yoghurt and a wedge of lime.

Ingredients

- 100g toor dal

- 2 tsp turmeric powder

- Water

- For Tadka

- 4 tsp ghee

- Dry Spice Mix 1

- 1 tsp mustard seeds

- ½ stick cinnamon

- 4 cloves

- 2 dried red chilli

- Dry Spice Mix 2

- 1 sprig curry leaves

- 5 to 6 fenugreek seeds

- 3 pinch hing

- Powdered Spice Mix

- 1 tsp red chilli powder

- ½ tsp coriander powder

- ½ tsp cumin powder

- 20g jaggery

- 3 kokum soaked in water

- Dhokli

- 100g atta flour

- 1 tsp turmeric

- ½ tsp red chilli powder

- 1 tsp oil

- Salt

- 1L water

- Vegetable oil to fry (optional)

Method

1. Soak toor dal for 3 hours then pressure cook for 10 minutes with some salt and 2 tsp turmeric. Once cooked, whisk to break lumps. Or boil in a pot for 30 minutes or until tender.

2. Mix mustard seeds, cinnamon, cloves and dried red chilli in a small bowl to make Dry Spice Mix One.

3. Mix curry leaf, fenugreek seeds and hing in another and call it Dry Spice Mix Two. Finally, mix coriander powder, red chilli powder and cumin powder for the Powdered Spices Mix.

4. In a big pot add ghee, once hot add dry spice mix one, once the mustard seed starts popping add dry spice mix 2 and then immediately add powdered spices. Add 1 litre of water and salt to taste.

5. Add cooked toor dal, jaggery and soaked kokum and let dal simmer while you prepare the dough.

6. Mix atta flour, salt, turmeric and red chilli powder, water and form a soft dough. Knead on a lightly floured bench for 3 minutes, or until the dough comes together in a smooth ball.

7. Roll out the dough, dust lightly with flour if sticky, then cut the dough in squares with a knife.

8. When the dal comes to a boil and bubbles start dropping the pieces of dough into the dal.

9. You can also separately deep fry some of the squares.

10. Once the dough is cooked in dal the dish is ready to serve.

11. Serve with lemon, coriander, ghee and deep fried Dhokli dough.
