About this recipe
Adam D'Sylva's farfalle in a Northern Italian woodsman's sauce of porcini, flat mushrooms, shimeji and Ligurian olives, finished with grated pecorino and chopped parsley. The dried porcini lend deep umami; the olives add brine and bite.
Boscaiola (literally the woodcutter's wife) is the Tuscan and Umbrian mushroom sauce that lives on every trattoria menu in the colder months. The original is built around the autumn wild mushroom haul (porcini, chanterelles, hedgehog mushrooms); the modern home version uses cultivated flat mushrooms and shimeji bulked up with dried porcini for depth.
The porcini soak is the technique. Cover dried porcini in hot water for twenty minutes; the liquor that results is liquid gold for the sauce. Squeeze the rehydrated mushrooms dry, slice them, add them to the pan with the fresh mushrooms, and pour the strained soaking liquid in as the deglaze.
Ligurian olives are the small, brine-cured, mild olives from the same coast as pesto and focaccia. Substitute Castelvetrano or a small green Niçoise if you can't find them. Pecorino rather than parmesan for the sharper, sheepier note. A glass of Sangiovese or Chianti alongside. Bread for the bowl, obviously.
Ingredients
- 50g grated Pecorino
- 1 tbsp Ligulian Olives
- chopped Parsley for garnish
- 250g Barilla Farfalle Pasta
- Salt for seasoning
- 1kg chopped Onion
- 50g Garlic
- 1/8 bunch Thyme
- 1kg Costa flat Mushrooms
- 300g Shimeji Mushrooms
- 400g Costa Brown Mushrooms
- 100g dried Porcini Mushrooms
- 300ml White wine
- 1L hot water for Porcini
- 2L thickened Cream
Method
1. soak dried Porcini in a small bowl of hot water. Reserve liquid
2. Boil salted water on high heat in a pot, add Farfalle Pasta and cook for approx 10 mins or until al dente
3. In another pan, saute onion, garlic and a touch of the pasta water until translucent
4. Chop remaining Mushrooms roughly and add to the onions with the white wine, thyme, cream and Porcini Mushrooms and liquid.
5. Season with salt and pepper and simmer for approx 10 mins
6. Add Pasta to pan with Boscaiola sauce
