About this recipe
Silvia Colloca's gluten-free zuppa. Broccoli, potato and brown onion simmered down with stock and good olive oil, then blitzed smooth until the colour turns deep green. Crisped prosciutto and lacy parmesan wafers go on top for crunch and salt. A gluten-free Italian zuppa with weight.
The potato is the structural ingredient that gives the soup its body without needing flour or cream. Cooked to soft and blitzed with the broccoli, the potato starch thickens the soup into a velvety puree that holds together on the spoon; the dish stays gluten-free and dairy-free (until the parmesan wafer hits the bowl) without losing the textural pleasure of a proper zuppa.
The blanching-first technique for the broccoli is the small chef move that preserves the colour. Broccoli that simmers directly in the soup turns dull olive-green (the chlorophyll degrades under prolonged heat); broccoli that's blanched briefly first in salted boiling water and then added to the cooked potato base for a final blitz holds its bright kelly-green colour through to the table.
The parmesan crisps (frico) are the Italian textural foil. Mounds of grated parmesan baked on parchment at 200 degrees for six or seven minutes until they melt, bubble and set into golden discs. Crisped prosciutto adds salt and a deep meaty note; the slices laid flat on a parchment-lined tray and baked at 180 until brittle. Drizzle good olive oil over the soup, scatter parmesan crisps and prosciutto shards. Serve hot, with a chilled glass of Vermentino.
Ingredients
- 1/3 cup (80ml) extra virgin olive oil, plus more for drizzling on top
- 2 brown onions, peeled and roughly chopped
- 2 potatoes (about 300g), peeled, chopped into 3 cm pieces.
- 2 garlic cloves, peeled and roughly chopped
- 4 cups (1L) chicken or vegetable stock
- Water
- 2 broccoli heads, cut into florets, stems chopped
- 8 Slices of D’Orsogna Prosciutto
- 1/2 cup (40g) Floridia Grated Parmesan, plus more for serving if liked
- salt and pepper for seasoning
- 3-4 Basil leaves
Method
1. Preheat oven to 200°C. Line a baking tray with baking paper.
2. Heat 1/4 cup (60ml) oil in a large heavy-based saucepan over medium heat. Add the roughly chopped onion, potatoes, garlic, and a pinch of salt. Cook for 3-4minutes or until slightly browned.
3. Add Broccoli stems and florets, roughly chopping the stems and cook together for 1-2 minutes, then add stock and enough water to cover the vegetables, increase heat, and bring to the boil for 15-20 minutes or until the potato and the broccoli stems are tender.
4. Meanwhile, place prosciutto on a prepared baking tray lined with baking paper, scatter with parmesan, be generous and drizzle lightly with olive oil. Bake for 10 minutes or until crisp’s and golden. Set aside.
5. Remove from the heat, transfer the vegetables to a blender (or use a stick blender) and some of the soup, add in your basil leaves. Blitz until very smooth. Season to your liking. If the mixture is too thick add some more of the soup and blitz again until smooth.
6. Serve in individual bowls with two prosciutto and parmesan crisps per person with basil and extra parmesan as desired.
