About this recipe

Silvia Colloca's loaf cake. Ground pistachios folded into a lemon-zested batter enriched with olive oil and mascarpone, baked into a tender loaf that smells like a Sicilian garden. Cake that holds for days and improves on day two. Slice thick, serve with coffee.

The ground-pistachio-as-flour technique is the Sicilian baking move that gives the cake its specific moist crumb and faintly green colour. Pistachios contain natural oils that keep the cake tender for days without going stale; the protein structure works similarly to almond flour in a French frangipane, binding the batter while contributing rich, buttery depth. Use whole shelled pistachios ground fresh in a food processor; pre-ground pistachio meal is often stale and loses its oils.

Olive oil (rather than butter) is the modern Italian baking choice that suits this style of cake. The oil keeps the crumb tender for longer, doesn't cloud when cold (the way butter does), and contributes a faint fruity note that pairs with the pistachio. Choose a mild extra-virgin olive oil; a robust, peppery oil would overwhelm the delicate batter.

Mascarpone whisked through the batter is the structural cream component that gives the loaf its cushiony soft texture. The Italian cream cheese sits between sour cream and clotted cream in fat content; the result is a moist, dense loaf with the slight tang of a cheesecake. Lemon zest in the batter and lemon juice in the icing tie the whole cake together; rest the loaf overnight before serving for the flavours to deepen. Coffee on the side, no notes.

Ingredients

- 120 g unsalted shelled pistachios, finely ground

- 140 g plain flour

- 1½ teaspoons baking powder

- ¼ teaspoon baking soda

- ¼ teaspoon fine salt

- 75 ml olive oil (extra-virgin is great, but choose a mild flavoured one)

- 150 g caster sugar

- Zest of 2 lemons

- 2 large eggs

- ½ teaspoon vanilla extract

- 120 ml thick Greek yoghurt

- 2 tablespoons freshly squeezed lemon juice

- 300 mls thickened cream

- 200g Floridia Ricotta

- 60 g icing sugar, sifted

- ¼ teaspoon vanilla paste

- For garnish:

- Lemon zest

- 1 to 2 tablespoons crushed pistachios

Method

1. Preheat the oven to 180°C (fan 160°C). Line a medium sized loaf tin (about 1.5-1.8 lt) with parchment paper.

2. In a bowl, whisk eggs and sugar until pale and fluffy.

3. Add olive oil and whisk through, then add yoghurt and salt and whisk through.

4. Add the ground pistachio and mix until combined, then sift flour, baking powder and bicarb soda into the bowl, and fold through until incorporated. Add in the lemon zest and juice, followed by the vanilla.

5. Pour the batter into the prepared tin and smooth the surface.

6. Bake for 35-40 minutes, or until a skewer inserted into the centre comes out clean.

7. Cool in the tin for 10 minutes, then remove and cool completely on a wire rack.

8. In a bowl, whisk together the cream, ricotta and icing sugar until smooth.

9. Once firm and airy add your Vanilla and stir through.

10. To finish, dollop the frosting over the cooled loaf. Garnish with lemon zest, and crushed pistachios.
