No Churn Ricotta Gelato

About this recipe

Silvia Colloca's no-churn gelato. Fresh Floridia ricotta whipped with sweetened condensed milk and cream, folded with orange zest, dark chocolate and pistachios, then frozen. No churn, no machine, just a Sicilian cannoli filling reimagined as a scoop. Crushed cannoli shells over the top for crunch.

The no-churn technique (whipping the cream-and-condensed-milk mixture to soft peaks before folding through the flavour base) bypasses the need for an ice cream churn by incorporating enough air during the initial whip to prevent the ice crystals from forming dense, hard structures during the freeze. The result reads as a proper gelato (denser than American ice cream, softer than a granita) without the equipment requirement.

Fresh Italian ricotta is the foundational ingredient. The Floridia version (or any small-batch Italian-style sheep's-milk or cow's-milk ricotta) is wetter, creamier and less grainy than the supermarket commercial brands; the difference shows immediately in the texture of the finished gelato.

The cannoli filling reference (orange zest, chocolate chips, pistachios) is the Sicilian cassata move. A real cassata uses sweetened ricotta as the cake filling; the gelato adaptation captures the same flavour combination in a frozen format. Smashed cannoli shells over the top for textural contrast; an espresso on the side. Eat within a week of making; the cream texture stays best fresh.

Ingredients

- 300 g fresh Floridia Ricotta

- 395g sweetened condensed milk (I can)

- 300ml heavy cream

- 1 tsp vanilla extract

- Zest of 1 orange

- 75g dark chocolate, finely chopped

- 30g chopped pistachios

- Smashed cannoli shells, for serving

Method

1. In a large mixing bowl, combine the ricotta and sweetened condensed milk. Whip for 3-4 minutes with electric beaters until smooth and creamy. This step is important as we need to incorporate as much air as we can.

2. In the same bowl, add the cream and using an electric beater, whip until peaks form. You want soft peaks but with a little structure. The love child of soft and firm peaks, if that makes sense!

3. Fold in the vanilla extract and orange zest. Then, fold in half of the chocolate.

4. Pour the mixture into a loaf pan or another freezer-safe container. Smooth the top with a spatula. Top with a little extra orange zest and the remaining chocolate. Cover with plastic wrap or a lid, then freeze for at least 4 hours or until firm. For best results, let the gelato sit at room temperature for 5-10 minutes before scooping.

5. Serve in bowls or cones, topped with orange zest, dark chocolate, pistachios and smashed cannoli shells for an extra crunchy, nostalgic twist.

6. Note

7. This gelato is at its best 4–5 hours after freezing, when it has a soft-serve texture. If you're serving it then and have leftovers, cover the tin with plastic wrap and return it to the freezer. It will freeze quite solidly—but don’t worry! When you're ready for more, take it out and let it sit at room temperature for 15–20 minutes before serving.
