About this recipe
Adam D'Sylva's pasta and bean stew, the Italian way: pancetta crisped first so the fat renders into the pan, then onion, garlic and bay sweated low and slow before crushed tomatoes, beans, stock and pasta join the pot. Thick, salty, the kind of bowl that gets thicker overnight in the fridge.
Pasta e fagioli is cucina povera at its purest, the Italian household dish built from the cheapest pantry staples: dried beans, stale bread, a fistful of pasta cut from the day's pizza scraps. Heinz peri peri beans are the modern shortcut here; the chilli and tomato seasoning already in the tin saves a step without losing the soul.
Cook the pasta separately to al dente and add it at the very end so it doesn't overcook in the stew (it'll absorb the broth and turn into porridge if you simmer it together for long). A handful of grated parmesan on top, a generous drizzle of green olive oil, and a hard grind of black pepper.
A bowl that improves with every reheat. Serve with crusty bread for the bottom of the bowl, and a glass of Chianti or a Nero d'Avola for the side.
Ingredients
- 3 tbsp Extra Virgin Olive Oil
- 200g Pancetta diced
- 1 Brown onion
- 3 Bay leaves
- Hand full chopped Flat Leaf Parsley
- 1 clove Garlic
- 250g can crushed Tomatoes (1 cup)
- 400mL Chicken stock
- 2 cans Heinz Peri Peri beans
- 250g Barilla Penne Pasta
- Salt and pepper to taste
- Freshly Grated Parmesan or Parmigiano Reggiano to garnish
Method
1. Cook the pasta in well salted boiling water until al dente
2. Heat 2 tablespoons of olive oil in a large pot over medium-high heat. Add the pancetta, onions and bay leaves. Cook for about 5 minutes, until softened and starting to brown, stirring occasionally.
3. Add the Garlic and sauté until fragrant, about 30 seconds.
4. Add 1 can of the Peri Peri beans, crushed Tomatoes, and the Chicken stock. Bring the mixture to a boil. Turn the heat down to low,
5. Add chopped Parsley.
6. Use a blender to puree the other tin of beans and add them to the pan.
7. Add cooked Pasta to pan with sauce and mix through
8. Stir in the remaining tablespoon of Olive Oil. Season with salt and pepper to taste.
9. Serve with freshly grated parmesan cheese and a drizzle of Extra Virgin Olive Oil, if desired.
