About this recipe
Bangers and mash done with the right onion gravy. Pork sausages browned hard in the pan so the skins crackle, brown onion caramelised low and slow until the sugars come out and the colour goes deep mahogany, and a Gravox base built up with the pan fond.
The British pub classic only works if each component is done right. The sausages need to start in a cold pan with a splash of oil so the fat renders out gradually rather than splitting the skins; the onions need at least 15 minutes on low heat to caramelise, not just soften; the mash needs enough butter to drink (70g for four large potatoes) and milk warmed before it goes in so the potatoes don't seize.
Gravox is the Australian household shortcut here. Whisked into the pan after the sausages come out, with a splash of water and the deglazed fond, it pulls the whole dish together without the half-day commitment of a real demi-glace.
Pub food, kitchen-table edition. Peas on the side, English mustard on the table. A pint of bitter or a glass of red. Sit-down food made on a weeknight.
Ingredients
- 8 pork sausages (if you don’t like pork sausages you can replace with any other flavoured sausage you like)
- 1 brown onion, peeled and sliced
- 2 cloves garlic
- Pinch pepper
- Sea salt
- 3 tablespoon Gravox
- 4 large potatoes, rinsed and peeled and cut in small cubes
- 70g butter
- 70ml cream
Method
1. Boil potatoes in salted water for 10-12 mins or when a knife inserted in the middle of the potato goes in easily with no resistance. Drain the potatoes making sure there is no residual water.
2. Using a potato masher, mash the potatoes to a smooth consistency. Season with salt and pepper and add the cream and butter making sure it's mixed through the potato. Set aside
3. Mix 3 tablespoon of the Gravox mix with 500ml water, making sure evenly mix with no lumps
4. In another pan caramelize onion medium heat for 1-2 mins then add garlic
5. Return the sausages to the pan and add the Gravox mix and simmer for 2-3 mins or until the gravy thickens
6. Serve the sausages and onion gravy over mash potatoes
