About this recipe

Pork mince kneaded together with minced garlic, honey, baking powder and a touch of curing salt, shaped onto skewers and barbecued for a couple of minutes a side until the outside chars and the inside stays juicy. Served Vietnamese-style with rice paper, fresh herbs and pickled vegetables. Street food with proper finesse.

The baking powder is the secret to a tender, light pork skewer rather than a dense, chewy one. A teaspoon kneaded into the mince at the mixing stage tenderises the meat and gives the skewer a slightly springy bite that mimics the mortar-pounded textures of professional Vietnamese kitchens.

Curing salt (a small amount of pink curing salt, not table salt) gives the pork the pink-tinged colour and slightly cured note that defines the proper nem nuong. Without it the skewers cook to pale grey; with it, they hold the rosy hue of restaurant Vietnamese.

Knead the mince for a full two minutes, longer than you'd expect, until the mixture turns sticky and slightly elastic. The kneading develops the protein in the meat and is what holds the skewer together over the heat without falling apart. Wrap into a rice paper roll at the table with cucumber, mint, coriander, perilla and a quick sweet-chilli dipping sauce. Cold Vietnamese iced coffee or a Saigon beer alongside.

Ingredients

- 500g Pork mince

- 10g Garlic (minced)

- 20ml Honey

- 1 tsp Baking powder

- 50g Pork fat(minced)

- 30g Curing salt

- 10 skewers soaked in water

Method

1. Mix all ingredients together in a large bowl, knead for 2 minutes. Shape into skewers and BBQ for 2 – 3 minutes

2. Vietnamese rice paper rolls with BBQ Flat head

5. 8 sheets rice paper

6. 200ml Nouc Cham for dipping

7. 20 fried shallots

8. hand full of lettuce, mint, chopped cucumber, coriander , basil & garlic chives

9. 60g cooked vermicelli

10. Season the fish and BBQ for 8 – 10 minutes.

11. Soak the rice paper in tepid water, lay flat on a plate. Fill with a little of all the other ingredients including the cooked fish. Roll up the rice paper and serve with the Nouc Cham dipping sauce.

12. BBQ Banana, tapioca and nuts.

13. 200g tapioca

14. 20g roasted sesame seeds

15. 20g roasted crushed peanuts

16. Combine the sugar and water in a pot, bring to a boil, add the tapioca and cook for 10 minutes then strain and cool.

17. BBQ bananas in the skin for 6 minutes, remove rom the skin and arrange on a plate, top with sago and roasted nuts and seeds
