The Easiest Vanilla Slice Ever
With
Steph De Sousa
No-bake Aussie vanilla slice with crackers, set custard and lemon icing. Cut from the tray.

About this recipe
A no-bake Australian vanilla slice: two layers of crackers sandwiching gelatine-set vanilla custard, topped with lemon icing. The crackers soften overnight in the fridge, the icing cracks when you cut it. Lunchroom nostalgia, scaled for a tray.
The vanilla slice (also called the snot block in Australian schoolyard slang, a term of affection rather than insult) is the bakery-counter classic that has lived in Australian cake shops since the post-war years. The structural pattern is consistent across regional variations: two layers of pastry or biscuit sandwiching a thick set custard, the whole thing topped with sweet glace icing in either passionfruit or lemon flavour.
Using crackers (Sanz Crackers here, a gluten-free brand; or any thin, light, flat biscuit cracker) instead of the traditional puff pastry is the home-baker shortcut that delivers most of the textural pleasure without the puff-pastry preparation. The crackers soften overnight in the fridge as they absorb moisture from the custard, becoming slightly cake-like; the final slice cuts cleanly and holds together on the spoon.
The gelatine-set custard (rather than the traditional cooked egg custard) is the second shortcut. Warm custard whisked with bloomed gelatine sets cold in the fridge into a sliceable, scoopable layer that holds its shape against the crackers; no constant stirring over a bain-marie required. Lemon icing on top (icing sugar mixed with lemon juice until pourable, then dried to a glossy crust) provides the bright citrus counterpoint to the rich custard. Cut into squares, eat from a paper plate at a netball-club afternoon tea. Pure nostalgia.
Ingredients
- 1 pkt Damora SANZ Crackers 250g - Sanz Crackers 250g
- 1 litre Brooklea Vanilla Custard 1kg - Vanilla Custard 1kg
- 2 tbsp gelatine powder - ALDI does not have gelatine – please decant out of packet
- Lemon icing:
- 2 cups icing sugar – ALDI does not have icing sugar
- 2 tbsp soft Pure Valley Unsalted Butter 500g - Unsalted Butter 500g
- Juice & zest of 1 lemon
Method
1. Pop gelatine into 1/2 cup cold water and stir. Microwave for 1 minute, stir, and if not dissolved, zap again for 30 seconds.
2. Heat 1/2 litre of custard in the microwave for 2 minutes, then stir through gelatine.
3. Add remaining custard to cool it down.
4. Refrigerate for 1 hour until starting to firm.
5. Line a slice tray with baking paper, cover the bottom with SANZ biscuits, then pour over the custard mix.
6. Top with more biscuits and pop in the fridge overnight.
7. For lemon icing, mix icing sugar, butter, zest and lemon juice until smooth, then spread over the top layer of biscuits.
8. Slice between biscuits and enjoy!
