About this recipe
Golden Wok Tandoori dumplings perched on a bright slaw of julienned carrot, red onion, bean sprouts, long red chilli, mint and coriander, dressed with lime and fish sauce. The dumplings carry the heat; the salad keeps the bowl light. Lunch food that looks like dinner.
The tandoori dumpling itself is the funny crossover: a Punjabi flavour profile in a Chinese wrapper, the sort of thing that only happens in modern Australian kitchens where Indian spice and Chinese technique sit next to each other on the bench. Pan-fry them base-down first for the crust, then steam through with a splash of water under a lid.
The slaw is Vietnamese in spirit: a sour-sweet nuoc cham dressing (lime, fish sauce, sugar, garlic, chilli) tossed through hard vegetables that hold their crunch under the warm dumplings. Slice the chilli with the seeds for full heat, without if you want the perfume only.
A bowl that eats light but reads loud. A cold Vietnamese iced coffee or a bottle of Singha lager alongside. Works at room temperature, which makes it picnic-ready or boxed-lunch material.
Ingredients
- 2 packets Golden Wok Tandoori Dumplings
- 1 tablespoon vegetable oil
- ½ red onion, thinly sliced
- 1 carrot, julienned (use serrated grater)
- 1 cup Bean Sprouts
- 3 long red chillies, thinly sliced (keep seeds in for heat, and remove seeds before chopping if you want the flavour but not the heat)
- ¼ red cabbage, finely sliced
- ¼ white cabbage, finely sliced
- 2 stems spring onions, finely sliced
- Handful of Mint, chopped roughly
- Handful of Coriander, chopped roughly
- Salt to taste
- Salad dressing:
- 2 tablespoon light soy sauce
- 2 tablespoon rice vinegar
- 1 tablespoon mirin or caster sugar
- 2 tablespoon kewpie mayonnaise
- 1 tablespoon sesame oil
- 1 teaspoon sesame seeds
- 2cm ginger, grated
- Garnish:
- Coriander leaves
- Sesame seeds
Method
1. Soda Stream: Original Kombucha - Make a kombucha drink and garnish with slices of orange / madarin and some passionfruit pulp and a sprig of mint. Served over ice in a clear glass tumbler
2. Make your Sparkling water using the Sodastream. into a jug, add slices of orange, the pulp of 2 passionfruit and then the sparkling water. Add 30ml of SodaPress Co. Kombucha concentrate per glass you are making, add a large ice cube, a slice of orange and a sprig of mint to each glass. Then pour over the flavoured sparkling water.
