Diana Chan shares her simple dish of Asian Salad with dumplings. Quick, easy and simple. This dish is one you can do using store bought dumplings, or if you are feeling adventurous, make your own. The salad is light and fresh, while the dumplings give it that extra oomph.
Ingredients
2 packets Golden Wok Tandoori dumplings
1 tablespoon vegetable oil
For the salad: ½ red onion, thinly sliced
For the salad: 1 carrot, julienned
For the salad: 1 cup bean sprouts
For the salad: 3 long red chillies, thinly sliced
For the salad: ¼ red cabbage, finely sliced
For the salad: ¼ white cabbage, finely sliced
For the salad: 2 stems spring onions, finely sliced
For the salad: handful of mint, roughly chopped
For the salad: handful of coriander, roughly chopped
For the salad: salt to taste
Salad dressing: 2 tablespoon light soy sauce
Salad dressing: 2 tablespoon rice vinegar
Salad dressing: 1 tablespoon mirin or caster sugar
Salad dressing: 2 tablespoon kewpie mayonnaise
Salad dressing: 1 tablespoon sesame oil
Salad dressing: 1 teaspoon sesame seeds
Salad dressing: 2cm ginger, grated
Garnish: coriander leaves
Garnish: sesame seeds
Method
To cook the dumplings: add 1 tablespoon of vegetable oil in a pan and add in the dumplings. Fry for 2 mins on each side. Add 1½ tablespoons of water and cover with a lid allowing the dumplings to steam for a further 5 mins.
To make the salad dressing: mix all the ingredients together in a mixing bowl and set aside.
To make the salad: add all the ingredients into a large mixing bowl and toss through. Season with salt and set aside.
Toss the salad through the dressing and mix through thoroughly.
Serve salad with the dumplings and garnish with some coriander leaves and sesame seeds.
