Authentic Italian frittata with Zucchini

About this recipe
Silvia Colloca's proper Italian frittata. Eggs beaten with milk and parmesan, poured over zucchini cooked soft in olive oil, finished on low heat until set. Basil or mint over the top. Brunch food, picnic food, or sliced cold for the next day's lunch.
The Italian frittata is structurally different from its French cousin the omelette: thicker, set rather than folded, often filled with vegetables or cheese, and crucially cooked low and slow rather than fast and hot. The French omelette is the lightning-quick three-minute breakfast; the frittata is the slow Sunday-morning egg dish that holds in the fridge for three days.
The low-heat technique is what defines a proper frittata texture. High heat scrambles the eggs and produces a tough, rubbery result; low heat (and patience) lets the proteins set gently into a tender, almost custardy structure. Cover the pan with a lid in the last two minutes to set the top without flipping; the residual heat from the pan finishes the cook.
Zucchini cooked in olive oil for three to four minutes until they soften but don't break down (a slight bite remains in each round) is the structural vegetable. The slight crunch against the soft eggs is the textural play. Parmesan grated into the egg mixture rather than scattered on top so it melts through the frittata; fresh basil or mint torn over the top after it leaves the pan for a green, aromatic lift. Cold slices for the next day's lunch wrapped in baking paper alongside a bottle of cold wine; the kind of food that turns leftovers into a picnic.
Ingredients
- 6-8 eggs, beaten
- 3 tablespoons of milk
- 1-2 tablespoon parmesan cheese
- salt and pepper for seasoning
- 6 tablespoons of Extra-virgin olive oil
- 2 zucchini cut into thin rounds
- Basil or mint to sprinkle on top
Method
1. Heat up 3 tablespoons of oil in a medium , non-stick pan. Add the zucchini and cook over medium heat for 3-4 minutes with a pinch of salt until the zucchini is slightly browned. Taste for salt and adjust accordingly and set aside in onto a plate.
2. In a bowl add 6-8 eggs, salt, pepper and whisk.
3. Wipe off the pan, then put it back onto the stove over high heat. Then add some parmesan cheese and milk and whisk.
4. Add the remaining oil to the pan, swirl it around to cover the base and sides, then pour in the egg mixture all at once and swirl to cover the base of the pan. As it starts setting, move it slightly with a spatula to allow the liquid mixture to get in contact with the base of the pan. When it looks like it’s 3/4 set, arrange the cooked zucchini on top, then cover with a lid for 10-20 seconds, then place a lid onto your pan that is slightly and flip the fritter onto it, slide it back onto the to the pan. Cook for 30 seconds the turn off the heat and slide onto a plate to cool slightly.
5. Top with basil and mint just before serving. It can be enjoyed hot, warm or even fridge cold the next day. Cut into squares or wedges to serve as an antipasto.
