Ingredients
3 x 250g blocks cream cheese
1 cup caster sugar
300ml thickened cream
1/4 cup plain flour
1/4 cup cacao/cocoa powder
1 tsp instant coffee
5 eggs
200g dark chocolate block
Method
Place a microwave-safe container filled with chopped chocolate in the microwave for a minute until melted.
Place cream cheese and 5 eggs into the food processor and whizz until smooth.
Add coffee, sugar, cacao powder and plain flour and whizz again until smooth.
Mix with a spoon before adding the melted chocolate and stir.
Line a springform pan with baking paper and pour in the batter.
Preheat your oven to 200°C and bake for 45–60 minutes.
Turn the oven off and let it cool inside for 15 minutes, then move it to your bench to cool for an hour.
Pop it in the fridge overnight to set.
When ready to serve, unspring the pan and slice the cake. Serve with fresh fruit on the side.

Steph De Sousa
Steph De Sousa cooks as The Frugal Foodie, building recipes around what's already in the pantry and the produce nobody wants to throw out. Her style is straightforward and budget-aware without being austere: roast vegetable peelings, second-day rice, a freezer worked properly. She brings practical home rhythms to Savour and Wander.
