Bucatini with zucchini, olives, and lemon

About this recipe

Silvia Colloca's zucchini cooked down in olive oil with bruised garlic until it almost melts, tossed through bucatini with chopped black and green olives, lemon zest and grated pecorino. A Sicilian-leaning summer pasta that lets the vegetable do the talking. Black pepper over the top.

The zucchini melt-down is the structural technique. Five zucchini chopped rough and cooked in extra virgin olive oil over medium heat for fifteen to twenty minutes, stirring occasionally, until the cell walls break down and the vegetable collapses into a sticky, almost-sauce consistency. The zucchini essentially becomes its own sauce; no cream, no tomato, no additional thickener needed.

Bruised garlic (cloves smashed with the back of a knife and left in their skins) is the Italian household trick that gives the dish its garlic perfume without the bite of chopped or minced garlic. The skins protect the cloves from burning over the long cook; the bruise releases the volatile oils into the surrounding olive oil. Fish out the cloves and skins before serving (or leave them in for whoever wants the soft, sweet jammy garlic at the bottom of the bowl).

Bucatini (the hollow long pasta strand) is the right shape because the hole through the centre catches the loose zucchini sauce in a way solid spaghetti cannot. The pasta finishes cooking in the pan with the zucchini and a splash of starchy pasta water; the starch emulsifies with the oil and the vegetable into a glossy coat. Olives, lemon zest, pecorino. A glass of cold Etna Bianco alongside if you want to keep it Sicilian.

Ingredients

- 1/3 Cup Extra Virgin Olive Oil

- 5 zucchinis (roughly chopped)

- 1-2 clove garlic (skin on, bruised with the back of a knife)

- Salt Flakes

- 500 g dried pasta

- 1/3 cup of black and green pitted olives, roughly chopped

- 1/3 cup pecorino (freshly grated)

- Freshly ground black pepper

- Basil leaves and finely grated lemon zest to serve

Method

1. Start by roughly chopping your zucchini’s. Heat 2x tablespoon of extra virgin olive oil in a large frypan over medium heat. Add in your garlic cloves and bash with the back of a knife (skin included) and cook until fragrant. Add in your zucchini and a pinch of salt. Pan fry for 5-6 minutes or until golden.

2. Once the zucchini is cooked, remove from the heat, discard the garlic and set aside.

3. Meanwhile, bring a large saucepan of salted water to the boil. Drop in 500 g pasta and stir well. Cook, stirring occasionally, until al dente (generally 1 minute less than the cooking time recommended on the packet).

4. Roughly chop your pitted olives and set aside.

5. When the pasta is ready, return the frypan with the zucchini to medium heat. Using tongs, transfer the pasta straight to the frypan, dragging a little of the cooking water with it, then toss well to combine with the oil and zucchini. Add a ladle of the cooking pasta water.

6. Remove the pan from the heat and add the pecorino. Stir vigorously to allow the residual heat from the pan to melt the cheese and create a luscious sauce.

7. Add the chopped olives and stir through. Divide among bowls and serve immediately with a good grinding of fresh black pepper, lemon zest and drizzle with the remaining extra virgin olive oil. Garnish with basil leaves.
