About this recipe

Grated carrots cooked down slowly with ghee, milk and sugar until they turn a deep orange and lose every bit of liquid. Saffron, cardamom and cream finish the sweet; a walnut crumble adds the textural contrast. Gajar ka halwa, North India's winter dessert.

Gajar ka halwa is the foundational North Indian winter dessert, made specifically with the red Punjabi delhi gajar (the deep red, slightly bitter winter carrots that come into season in November-December and disappear by March). The Western orange carrot substitutes but produces a milder, sweeter halwa with less of the slightly bitter undertone that defines the proper Punjabi version.

The slow milk reduction is the technique that builds the dish. Grated carrots simmered in full-cream milk for an hour and a half until every bit of the milk's water evaporates and the milk solids cook down into a thick, sweet, slightly grainy base that binds the carrots. The technique mirrors the broader Indian milk-reduction tradition (khoya, mawa, basundi) that defines so many North Indian desserts.

Ghee added at the end (rather than the start) is the modern Punjabi adjustment. Where older recipes start the carrots in ghee, the cleaner modern version reserves the ghee for the final stage so the carrots cook in milk only and the ghee perfumes the surface rather than penetrating throughout. Saffron bloomed in warm milk; green cardamom ground fresh. Serve warm with a scoop of pistachio gelato; a sprinkle of toasted walnut crumble for crunch. The dessert of a North Indian winter.

Ingredients

- 750g carrots, peeled and grated

- 45g ghee

- 255g caster sugar

- 225ml milk

- 1g saffron powder

- 165ml cream

- Pinch cardamom powder

- Pinch salt

- 1 lemon, zest

- Walnut crumble

- 156g flour

- 100g walnuts, chopped

- 75g brown sugar

- Pinch salt

- 75g butter, cubbed (keep cold)

- 2.5g cinnamon powder

Method

1. Pistachio gelato

3. Preheat your oven to 180°C fan-forced.

4. Heat clarified butter in a pot. Add in carrots, and saute until carrots have softened.

5. While the carrots are sauteing, prepare the crumble. In a large bowl rub in cold butter into dry ingredients, until it reaches a breadcrumb-like consistency.

6. Spread the crumble mixture out on a flat tray and bake in the preheated oven for 15-20 minutes or until golden brown.

7. Add the milk and saffron powder and cook down for a few minutes. Add cream and stir through the carrots before adding the sugar, cardamom powder, a pinch of salt and lemon zest.

8. Simmer for 10 minutes or until the mixture has reduced and thickened, stirring occasionally to ensure it doesn't burn.

9. Place a generous spoonful of the carrot halwa on your serving plate topped with crumble and a scoop of pistachio gelato. Garnish with gold leaf to serve.
