About this recipe

Silvia Colloca's broccoli cooked down with anchovy, garlic and chilli until the florets break into the sauce, tossed through caserecce with lemon zest and good oil. A Calabrian-style pasta that turns one vegetable into the whole dish. Pasta water does the binding.

This sits in the broader southern Italian pasta-with-broccoli family that includes the Sicilian pasta con i broccoli arriminati (with toasted breadcrumbs and saffron) and the Apulian orecchiette con cime di rapa (with bitter rapini greens). The defining cooking move is the same across the region: cook the broccoli hard in the pan with anchovy and garlic until it breaks down into a soft, savoury, almost-paste that coats every strand of pasta.

Anchovy melted into the olive oil at the start is the structural seasoning. Six fillets dissolved in the oil contribute deep umami salt that no one will be able to identify; the fish flavour disappears completely into the pasta but the savoury foundation it provides is what makes the dish read as Calabrian rather than generically Mediterranean.

Caserecce (the short, twisted pasta shape that looks like a rolled-up sheet of paper) is the right pasta. The twists catch the broken-down broccoli in their folds in a way smoother shapes cannot; substitute fusilli, casarecce or trofie if caserecce is unavailable. The starch-rich pasta water (a generous half-cup reserved before draining) emulsifies with the olive oil into a glossy coat. Lemon zest, black pepper, more good olive oil at the end. Parmigiano grated over the top. A glass of cold Greco di Tufo.

Ingredients

- 400 g San Remo caserecce pasta

- 1 large head of broccoli (or 2 small), stalks finely chopped, florets broken into small pieces

- 5 garlic cloves, minced

- 6 anchovy fillets (or to taste)

- 1.5 to 2 teaspoons dried chilli flakes (adjust to taste)

- 4 Monini Classico tablespoons Olive Oil

- 4–5 tablespoons dry white wine

- Zest of 1 to 2 lemons (depending on how lemony you like it)

- 60g Floridia Cheese chilli pecorino, finely grated (or regular pecorino with extra chilli flakes)

- Salt, for pasta water

Method

1. Bring a large pot of salted water to a boil.

2. In a saute pan, heat the olive oil over medium-low heat. Add the minced garlic, anchovy fillets, and chilli flakes. Stir gently until the anchovies melt into the oil and the garlic softens. Don’t let the garlic brown too much.

3. Deglaze the pan with the white wine, letting it simmer and reduce for about a minute. Then take the pan off the heat.

4. Once the water has boiled Add the chopped broccoli stalks and the casarecce together. Cook according to the pasta’s packet instructions (usually 9–11 minutes total).

5. Halfway through the pasta cooking time, add the broccoli florets. This ensures they’re cooked but still vibrant and slightly crisp, about 5 to 8 minutes.

6. When the pasta is al dente and the broccoli is tender, turn the heat back on your saute pan, use tongs or a slotted spoon to lift everything directly into the sauté pan. Allow a little pasta water to come along—it helps emulsify the sauce.

7. Toss everything together until the pasta is well coated in the garlicky, spicy oil.

8. Remove from the heat, add the grated chilli pecorino and lemon zest, and toss again until the cheese melts and everything looks silky.

9. Serve immediately
