Ingredients
500g beef mince
1/2 cup diced pickles
1 tsp garlic salt
1 tsp onion powder
2 tsp smoked paprika
1/4 cup tomato sauce
1/2 cup breadcrumbs
Pinch of salt
6 thumb-sized pieces of mozzarella cheese
1 red onion
3 sliced brioche burger buns
Method
Add beef mince, pickles, breadcrumbs, garlic salt, smoked paprika, onion powder and tomato sauce into a large bowl. Mix really well until combined.
Divide the mixture into 6 sections.
Spray a large muffin tin with olive oil.
Cut 3 brioche buns in half and press each bun half (toasted side down) into the muffin holes using a glass.
Cut mozzarella into 6 pieces.
Fill each muffin tray 3/4 full with the beef mixture.
Press a piece of mozzarella into the middle and cover with a little more beef.
Top with a slice of onion, spray lightly with olive oil and bake at 200°C for 15–20 minutes or until golden and cooked through.
Serve hot with your favourite burger sauce or tomato sauce for dipping.

Steph De Sousa
Steph De Sousa cooks as The Frugal Foodie, building recipes around what's already in the pantry and the produce nobody wants to throw out. Her style is straightforward and budget-aware without being austere: roast vegetable peelings, second-day rice, a freezer worked properly. She brings practical home rhythms to Savour and Wander.
