Cottage Pie with Sweet Potato Mash

With

Steph De Sousa

Cottage pie with beef mince and sweet potato mash. British pub food, Australian twist.

Cottage Pie

About this recipe

Beef mince slow-simmered with carrot, celery, onion and tomato, then topped with sweet potato mash instead of the usual white. Baked until the top crisps and the filling bubbles up the edges. British pub food with an Australian twist.

Cottage pie is the British household dish (distinct from shepherd's pie, which uses lamb) that has crossed into the Anglo diaspora since the early nineteenth century when potato cultivation became widespread in Britain. The defining structural feature is the contrast between savoury minced-meat filling and the soft, golden potato topping; the dish is a slow-cooked one-tray meal that scales easily to feed a crowd.

The sweet-potato mash substitution is the modern Australian variant that pulls the dish slightly out of pure British territory. Sweet potatoes (the orange-fleshed variety, kumara) bring a natural sweetness that balances the savoury meat filling in a way white potatoes cannot; the orange colour also reads more vibrant on the plate. The mash is naturally creamier than white-potato mash because of the lower starch content; no extra butter needed.

The slow simmer on the filling is the technique that develops the depth. Beef mince browned hard first, then carrot, celery, onion and garlic sweated in the rendered fat for ten minutes; tomato paste, worcestershire and beef stock added; simmered uncovered for at least forty-five minutes until the liquid reduces and the flavours concentrate. The filling should be thick enough that a spoon stands up briefly when dragged through it; loose filling produces a watery pie. Topped with the mash, baked at 200 for twenty-five minutes until the surface crisps. A green salad on the side.
