About this recipe

Silvia Colloca's heirloom cherry tomatoes roasted slow with balsamic, garlic and mixed herbs until they collapse into a jammy heap. Spooned over whipped ricotta on a thick crostini, finished with more balsamic. Italian antipasto, summer-leaning.

The slow-roast technique on the tomatoes is the structural ingredient. Cherry tomatoes (a mix of heirloom varieties for visual variety) tossed with olive oil, balsamic vinegar, smashed garlic and mixed herbs (rosemary, thyme, oregano), then roasted at 180 for 45 minutes to an hour until the tomatoes burst, the juices reduce and the surface caramelises into a jammy spread. Some left whole for visual contrast.

The whipped-ricotta base is the upgrade on a simple ricotta smear. Fresh full-fat ricotta blitzed in a food processor with olive oil, lemon juice and salt for a full minute until the texture turns light, fluffy and almost mousse-like; the air incorporated during the whip gives the ricotta a cloud-like quality that suits being spread on toast. Substitute mascarpone for a richer, denser version.

A thick slice of crusty bread (sourdough, ciabatta or a country loaf) toasted until the outside crisps and the inside stays soft, rubbed with a halved garlic clove for a faint allium edge, smeared with the whipped ricotta, topped with the tomatoes, drizzled with the reduced balsamic from the roasting tray. Sea salt flakes, black pepper, fresh herbs torn over the top. A glass of cold rose, the kind of summer antipasto that doubles as lunch.

Ingredients

- 800 gr of cherry tomatoes (I used mixed heirloom)

- 4 tablespoon of extra virgin olive oil

- 3 tablespoons of balsamic vinegar, plus more for serving

- 1 head of garlic cut in half

- A generous handful of mixed fresh herbs (thyme, oregano, rosemary)

- Salt, to taste

- freshly ground white or black pepper, to taste

- 1x 400 g tin of cannellini beans, well drained and rinsed

- 400 gr of ricotta

- 3 tablespoons of unsweetened Greek yogurt

- thinly sliced baguette or ciabatta

Method

1. Preheat your oven to 180, static.

2. Wash your tomatoes, leave some whole and cut the rest in half.

3. In a large roasting tray cover the base with a drizzle of olive oil, place the garlic heads cut side down, add your tomatoes, salt, balsamic vinegar and herbs. Cover your tray with aluminium foil. Bake for 20 minutes then remove the aluminium foil and bake for further 15 to 20 minutes or until tomatoes are blistered, but still intact and the garlic is soft.

4. Remove from the oven and remove the herbs from the dish.

5. Place the ricotta and yogurt in a large bowl and using a fork mash them up until smooth. If you like you can do this in a food processor, if you like it super smooth. Season with salt and pepper.

6. Add the well-drained beans to the tomatoes while they are still warm, taste for seasoning and fix as required.

7. Grill the slices of bread then serve the whipped ricotta onto a platter, scatter the beans and cherry tomatoes on tops, with all the juices and the sliced grilled bread on the side. Top with fresh basil leaves and a little extra balsamic vinegar. If you like you can spread the softened garlic onto the bread for a flavour sensation.
