About this recipe

Prawn shells and heads simmered into a deep stock with bruised lemongrass, sliced galangal, garlic and kaffir lime leaves, then strained into a Thai red curry broth. The bones of a great curry start here, the kind of stock that elevates the whole dish from the first spoonful.

The shellfish-shell stock is the technique that turns a home curry into restaurant cooking. Where most home cooks throw the shells out, the proper Thai approach is to crush them, brown them hard in oil to release the carotenoids and the brown flavours, then simmer them with aromatics into a deep, orange-tinted stock that carries forward into every step of the recipe.

Bruising the lemongrass (smashing the white inner stalk with the back of a knife or a heavy pan) is the small step that matters. The bruise releases the volatile oils that simmering alone won't extract; without it, lemongrass adds colour but not perfume.

Galangal rather than ginger is non-negotiable. The two roots look similar but taste nothing alike: ginger is sharp and pepper-warm, galangal is camphor-meets-citrus, with a piney edge that's the foundational aromatic of Thai curry pastes. Sourced from any Asian grocer. Fish sauce, palm sugar and lime juice to balance the curry once the stock is built. The kind of small effort that turns a Wednesday-night curry into a Friday-night one.

Ingredients

- 2 lemongrass stalks, bruised

- 5 cm piece of fresh galangal or ginger, sliced

- 3 garlic cloves, sliced

- 8 kaffir lime leaves

- 2 litres fresh salt reduced chicken stock

- 1 tbsp Ayam Fish Sauce

- 2 small Red Chillis, chopped plus extra to serve

- 1 tbsp Ayam Sambal Oelek

- 4–6 tbsp (80–120 g) Ayam Red Curry Paste

- 2 Truss Tomatoes, cut into wedges

- 300g mixed Mushrooms, Shiitake, Oyster, Enoki

- 2 bunches Mustard Greens, stalks & leaves separate

- 2 bunches Gai Lan, stalks and leaves separated

- 12 medium Green Prawns, peeled, de-veined tails intact

- ¼ cup Lime juice plus Lime wedges to serve

- 600g Silken Tofu cut into 3cm pieces

- 1 packet of Rice Noodles - cooked to manufacturers instructions

Method

1. Peel the Prawns and set the shells aside to make the broth

2. To a pot with a few tablespoons of olive oil, add some of the Prawn shells and heads. Cook until coloured and then add the Lemongrass, Garlic, Galangal or Ginger, Kaffir Lime leaves, Ayam Red Curry paste, and about a litre of salt reduced Chicken stock, place over high heat and boil for 5-10 minutes or until fragrant.

3. Strain the Prawn stock through a fine sieve and discard the shells and aromatics.

4. Add the Prawn Stock back into the pot along with the peeled Prawns, Mushrooms and Tomato simmer for 5 minutes or until tender.

5. Stir in Ayam Sambol Oelek, Lime juice and Ayam Fish Sauce, and add Tofu to heat through.

6. Blanch the Gai Lan in the stock, add the cooked rice noodles, spoon in the Tofu and Broth, and Serve with extra Chilli and lime wedges alongside.
