Gluten free one bowl brownie (Make 8 pieces)

Diana Chan
A one-bowl gluten-free brownie. Fudgy, not cakey, ready before the kettle.

About this recipe
A gluten-free brownie that asks for one bowl and a spatula. Gluten-free self-raising flour, cocoa, both brown and caster sugar for depth, melted butter, eggs, a tablespoon of vanilla bean paste and chopped chocolate folded through. The fudgy kind, not the cakey kind.
The brown sugar is the upgrade. Where caster alone gives a cakey crumb, the molasses in brown sugar pulls the brownie towards the chewy-fudge end of the spectrum, the texture that defines the American bakery brownie at its best. Melted butter rather than creamed keeps it dense.
Gluten-free flour blends tend to absorb more liquid than wheat flour, so the egg ratio here is generous (three eggs to a cup of flour) to keep the batter wet. Underbaking by two minutes is the secret to a proper fudge centre; pull it from the oven when the top is set but the middle still wobbles slightly.
Line the tin with baking paper and lift the whole slab out to cool before cutting. The brownie firms up as it cools, slicing cleaner after an hour in the fridge. Serve with a scoop of vanilla ice cream and a coffee on the side.
Ingredients
- 1 cup gluten free self raising flour (substitute for normal plain flour), sifted
- ¾ cocoa powder
- ½ cup brown sugar, optional
- 1 cup caster sugar
- 175g butter, melted
- 1 tsp vanilla bean paste
- 3 eggs
- 125g chocolate of your liking (dark, milk or white chocolate). Using 60g dark chocolate and 65g white chocolate for this recipe
Method
1. Add all the dry ingredients except the chocolate into a large mixing bowl then add in the eggs and melted butter. Mix thoroughly with a spatula.
2. Roughly chop the chocolate into smaller pieces and add it to the bowl.
3. Line a 8 x 8 inch baking tin with some baking paper and pour in the brownie mixture. Bake in a 180C oven for 10-15 mins. This depends on how gooey you’d like your brownies to be. Lesser baking time, makes for a softer middle. Let the brownie cool in the tin before cutting them. Serve with any ice cream of your choice.
