About this recipe
Golden Wok's Thai chicken dumplings dropped into a creamed-corn broth scented with grated ginger, minced garlic, light soy and a splash of Shaoxing wine. Comfort food in fifteen minutes, the kind of soup that fits a wet Tuesday night.
The creamed corn is the structural trick. It thickens the chicken stock into something silky and slightly sweet, doing the work that a roux or a cornflour slurry would normally do but without the starchy aftertaste. The Chinese-American precedent is the egg drop and corn soup that's been on restaurant menus since the 1950s, born of the post-war availability of canned corn in American Chinatowns.
Shaoxing rice wine is the bottle that lifts this past a generic soup base. The cooking wine's slightly fermented, nutty depth rounds out the stock; if you can't find it, dry sherry is the cleanest substitute.
A cornflour slurry whisked in at the end thickens the broth to a glossy coat. The dumplings pan-fried base-down first, then dropped into the soup at the very end so they keep their crust. Spring onion on top, a small dish of black vinegar on the side for dipping the dumplings as you eat.
Ingredients
- 1 packet Thai chicken dumplings
- 500ml chicken stock
- 1 can (420g) creamed corn
- 3cm ginger, grated
- 2 garlic cloves, minced
- 1 tablespoon light soy sauce
- 1 tablespoon Shaoxing wine (Chinese cooking wine)
- 1 tablespoon cornflour, mixed with 2 tablespoon of water into a slurry
- 1 egg, beaten
- Salt and white pepper to taste
- For garnish:
- 2 stems of spring onion, thinly sliced
- 2 cm ginger, julienned
Method
1. Place a saucepan over high heat and add in the stock, creamed corn, ginger, garlic, soy and Shaoxing wine. Stir and bring the mixture to a boil.
2. When the mixture has come to a boil, add in the cornflour mixture and allow to thicken.
3. Season the soup with salt and white pepper and switch the heat off. Add in the beaten egg and whisk to resemble ribbons in the soup.Set aside.
4. Add in 1 tablespoon of vegetable oil in a pan and add in the dumplings, Fry for 2 mins on each side. Add in 1 tablespoon of water and cover with a lid allowing the dumplings to steam for a further 5 mins.
5. Serve the soup with the dumplings and garnish with some spring onions and ginger.
