About this recipe
Five large prawns butterflied flat against a screaming-hot griddle, the flesh sweetened by a quick rub of chilli, garlic and coriander. Olive oil for the pan, salt and pepper to finish. Twelve minutes from kitchen to table.
Butterflying matters here. Run a sharp knife down the back of each prawn, keeping the head and tail intact, lift out the digestive tract, and press the prawn flat with the heel of your hand so it cooks even and curls into the shape that holds the marinade. The shell stays on to protect the flesh from the direct heat and to crisp at the edges.
Mediterranean grill cooking, the kind of thing that lives on Greek-island taverna menus and shows up on the Spanish coast as gambas a la plancha. The garlic and chilli are non-negotiable; coriander is the modern flourish that pulls it into a Vietnamese or Thai register.
Serve with a wedge of lemon, a bowl of aioli or skordalia, bread for the juices, and not much else. A glass of cold Albarino or a beer from the fridge. Eaten with fingers, shells stripped at the table, heads sucked if you're with the right crowd.
Ingredients
- 5 large prawns
- ½ large red chilli
- 2 cloves garlic
- 3 sprigs coriander
- Olive oil for cooking
- Salt and pepper to taste
Method
1. Heat a griddle or a medium sized pan on high heat. Drizzle in some olive oil.
2. To butterfly the prawns, run a sharp knife down the back of the prawns keeping the head and tail intact, remove the digestive tract and run the knife splitting the head in half from the top and clean it either by running it under some water or wiping it. Using your palm, flatten the prawns by pressing down the shell side.
3. Place the prawns flesh side down onto the griddle, season with some salt and pepper and cook for 1-2 mins depending on the size of your prawns. Tip, once the shell turns red and the flesh is opaque, that's' when you know it’s done.
4. In the meantime, peel and mince the garlic and finely chop the chillies.
5. Return to the griddle and flip the prawns over to the shell side down. Add int the garlic and chillies and drizzle a little more olive oil.
6. Cook for another 2 mins then remove and place onto a serving plate. Pour over the sauce from the pan and garnish with some coriander leaves.
