About this recipe
Silvia Colloca's Neapolitan seafood pasta salad. Vongole, mussels, squid and prawns steamed open with white wine, tossed cold through wagon wheel pasta with olives and good olive oil. Summer holiday food along the Amalfi coast, made for sharing from a single big bowl.
This sits in the broader Italian insalata di mare repertoire (the seafood salads that line every coastal restaurant menu from Liguria down to Sicily), here transposed onto a pasta base. The shellfish are cooked separately from the pasta and combined cold; the residual cooking liquid is reduced and used as part of the dressing, capturing all the seafood essence in concentrated form.
Wagon wheels (ruote) are the playful Italian pasta shape that suits cold pasta salads perfectly. The spokes catch small pieces of seafood and olive in their gaps; the central hub holds dressing; the round, flat shape means each piece sits evenly on the plate rather than rolling around. Substitute conchiglie or large fusilli if you can't find wagon wheels.
The ice-bath shock on the pasta is the critical technique. The pasta cooked to al dente, then plunged immediately into ice water to stop the cooking and lock in the firm texture; pasta that finishes cooling in air goes soft and pasty. The shellfish stocks reduced together and emulsified with extra virgin olive oil into a sauce that coats the pasta and the seafood. Parsley, lemon zest, black pepper to finish. Serve cold or at room temperature, never hot. A glass of Falanghina alongside.
Ingredients
- 500 gr vongole
- 2 small squid tubes
- 150 ml of dry white wine
- 500 gr fresh mussels, cleaned and de-bearded
- 8 uncooked prawns, peeled and deveined
- 150 ml white wine
- 3 tablespoons Monini Organic extra virgin Olive Oil
- 10–12 olives, pitted
- 400 gr of San Remo Wagon Wheel Pasta
- halved cherry tomatoes (about 1/2 cup)
- finely grated zest of 1 lemon
- 5 tablespoons extra virgin olive oil
- 3 tablespoon Mazzetti Apple Cider Vinegar
- 1 small handful of finely chopped flat-leaf parsley
- salt flakes and freshly ground white pepper
- 1 small red chilli thinly sliced
Method
1. Bring a large pot of salted water to the boil. Drop in the pasta and stir well. Cook to perfectly al dente, then strain and plunge the pasta in ice cold water to stop any residual heat over cooking the pasta.
2. Place a deep heavy-based frying pan over high heat, pour in the wine, then drop in the clams and mussels. Cover with a lid and allow the steam to open the shells. As they open, fish them out with a slotted spoon and set them aside in a bowl. Leave half of them in their shells for presentation. Discard any that don’t open. Reserve the poaching liquid.
3. Place the griddle pan onto the stove and heat on high. Add the olive oil, then stir-fry the prawns for 2–3 minutes each side, depending on their size, season, set aside, then add your squid and fry for about 2-3 minutes. Season. Set aside.
4. Drain the cooled pasta and table into a mixing bowl, add seafood and dressing and mix well.
5. Tumble onto a serving dish, scatter over the olives and cherry tomatoes, a little extra chopped parsley, lemon zest and an extra drizzle of extra-virgin olive oil and serve
