About this recipe
Black chickpeas simmered in a Keralan masala of roasted coconut, fennel, cinnamon, cloves and black pepper until the gravy turns dark and nutty. The Keralan breakfast curry, ladled over appam or red rice. Coconut oil gives it the unmistakable southern lift.
Kadala curry (kala chana in Hindi, kadala parippu in Malayalam) is the Keralan Hindu and Christian household breakfast staple, served with puttu or appam in the morning to set up the day. The black chickpea (a smaller, harder-skinned variety than the more common cream chickpea, with a darker, nuttier flavour) is the regional speciality of South India and Sri Lanka; the dish doesn't translate properly with regular kabuli chana.
The roasted-coconut paste is the structural element. Fresh grated coconut dry-roasted in a pan until deep gold, then ground in a wet grinder with the spices and a splash of water into a thick, brown paste. The roasted coconut adds nuttiness and body; the cooking water from the chickpeas thins the paste into the final gravy.
Coconut oil is the only acceptable oil here. Sourced from Kerala or Sri Lanka, virgin pressed, with that distinctive sweet-coconut fragrance that distinguishes proper South Indian cooking from the broader Indian register. The black pepper is the heat (no chilli powder in this dish); fennel rounds the corners with a soft licorice note. Serve over appam or steamed Kerala red rice. The breakfast that powers a coastal morning.
Ingredients
- 25g coconut oil
- 100g brown onion, sliced
- 2 tsp fennel seeds
- 1 stick cinnamon
- 4 cloves
- 20g ginger, peeled and sliced
- 2 tsp turmeric powder
- 3 tsp red chilli powder
- 4 tsp coriander powder
- 2 tsp black pepper powder
- ½ tsp nutmeg
- ½ tsp mace
- 50g fresh grated coconut
- ⅓ cup water
- 1 tsp coconut oil
- ½ tsp mustard seeds
- 1½ dried red chilli
- 10 curry leaves pieces
- 50g black chickpeas dried or 100g tinned chickpeas
- ½ cup water
- 1 tbsp tamarind paste
- To garnish
- Fresh grated coconut
Method
1. If you are using dried black chickpeas soak Black Chickpeas overnight and then cook in salted boiling water until tender. Alternatively you can use tinned chickpeas.
2. Heat up coconut oil then add sliced onion, fennel seeds, followed by cinnamon and cloves. Within a few seconds add ginger. Then add fresh or frozen coconut followed by some salt and toast everything for 6 to 7 minutes, stirring frequently to ensure nothing burns.
3. Blend the mix with little water to a smooth paste.
4. Add some coconut oil to the pan followed by mustard seeds. Temper in the hot oil for 30-60 seconds or until they just stop popping. Add curry leaves and dried chilli and stir through the oil before adding the paste.
5. Add cooked black chickpeas (or tinned chickpeas), water and tamarind paste. Stir through, season with salt, bring up to a gentle boil. Cook for a few minutes or until the chickpeas have warmed through and the sauce thickens slightly.
6. Top with fresh coconut to serve.
