Kevin He - Farm 88 T-Bone Steak - with a Garlic and Herb Baste

With

Gary Mehigan

Seared T-bone basted with butter, smashed garlic and rosemary. Steakhouse method, home pan.

About this recipe

A thick T-bone seared hard in a hot pan, then basted with foaming butter, smashed garlic and rosemary until the herbs perfume the kitchen. Rested before slicing so the juices settle. A steakhouse method, executed at home, no shortcuts on the resting time.

The room-temperature start is the foundational step. Pull the steak from the fridge thirty to forty-five minutes before cooking; a cold steak goes in cold and produces an uneven cook (a grey band of overdone meat around a cool, almost raw centre). At room temperature the heat penetrates evenly and the cook stays uniform from edge to centre.

The baste-with-butter technique (the French arroser) is the classical French method for flavouring the meat with aromatics during the cook. After the initial hard sear in oil, knock the heat down to medium, add butter, smashed garlic cloves and rosemary sprigs; tilt the pan and spoon the foaming butter over the steak constantly for the last few minutes. The herbs perfume the butter, the butter bastes the meat.

The rest is non-negotiable. Five to ten minutes for a thick T-bone, loosely covered with foil on a warm plate. Cutting too soon spills the juices onto the board; rest properly and the juices reabsorb into the meat. Slice across the grain on the diagonal for the most tender bite. Maldon salt over the top, a few extra rosemary needles, a glass of Aussie shiraz alongside.

Ingredients

- Steak: 1 large Tasman Meats Farm 88 T-Bone Steak (1–1.5 inches thick, approx. 1-1.5 lbs)

- Fat: 2 tbsp Extra Virgin Olive Oil or Avocado Oil (high smoke point)

- Baste: 3 tbsp unsalted Butter

- Aromatics: 4–5 cloves Garlic, smashed

- Herbs: 2–3 sprigs fresh Rosemary or Thyme

- Seasoning: Salt and freshly cracked Black Pepper

Method

1. Prepare the steak: Remove the Farm 88 T-Bone Steak from the fridge 30–45 minutes before cooking to bring it to room temperature. Pat dry thoroughly and season with salt.

2. Sear the steak: Heat a stainless steel pan over high heat until very hot. Add a drizzle of extra virgin olive oil and place the T-bone into the pan. Cook for 2 minutes per side, or until a deep golden crust forms. Sear the edges as needed.

3. Check the temperature: Use a thermometer to check the internal temperature. For medium-rare, aim for 48°C–54°C.

4. Baste: Reduce the heat slightly and add unsalted butter. Once the butter turns golden, add rosemary and crushed garlic. Tilt the pan and continuously baste the steak with the butter for 1–2 minutes.

5. Rest: Remove the T-bone from the pan and place it onto a plate. Spoon the pan drippings over the steak and allow it to rest for 3–4 minutes. Finish with a pinch of freshly cracked black pepper.

6. Serve: Slice the meat off the bone and cut against the grain before serving.
