Lamb Gozleme

About this recipe

Justine Schofield's Turkish gozleme stuffed with spiced lamb mince, baby spinach and Greek-style fetta, pan-cooked until the wrap blisters and the cheese melts inside. Cumin, paprika and a hit of garlic do the talking. Market-stall food, made at home on a hot pan.

Gozleme is the Turkish street-market flatbread that has spread across the broader Mediterranean and Australian-Turkish diaspora through the network of Turkish-Australian community food festivals. The defining structural feature is the thin, large flatbread (around 30cm across) folded around a savoury filling and cooked flat on a hot griddle until the bread blisters and the filling melts. The bread itself is unleavened and stretches almost to translucency.

The lamb-mince filling is the structural ingredient that pulls this version into the traditional Turkish register (rather than the lighter spinach-and-cheese-only variations also common). Lamb mince mixed with finely diced red onion, garlic, cumin, paprika and a beaten egg (to bind the mixture into something that doesn't fall out of the gozleme), cooked through in a pan before being spooned onto the rolled-out bread.

The greek-style fetta (rather than the more crumbly Bulgarian or Cypriot varieties) is the right cheese here. The Greek version is creamier, milkier and softer, melting into the filling rather than staying in distinct lumps; the combination of the salty cheese with the spiced lamb is the Turkish-Greek crossover that defines this version. Wilted baby spinach folded through, the whole filling spooned onto half the bread, folded over and pan-cooked. Brush with butter while cooking; cut into wedges; serve with lemon wedges. A glass of cold Assyrtiko or a Turkish raki.

Ingredients

- 500gm Lamb Mince Killarnee Farms

- 1 Lodge Farm Egg

- 1 tsp Stone Mill Paprika powder

- 1 tsp Stone Mill Cumin powder

- ¼ Red Onion, finely diced

- 1 tsp Stone Mill crushed Garlic

- 1 large handful Fresh Salad Co. Baby Spinach leave

- 200gm Emporium Greek Style Fetta

- 6 Baker’s Life large white Wraps

- StoneMill Black Pepper and Salt, to season

Method

1. In a bowl, using your hands combine the Lamb Mince, Salt and Pepper, Paprika, Ground Cumin, crushed Garlic, and Onion. Add in the Egg and mix.

2. Next, crumble the Fetta into the bowl, add the Spinach and scrunch all together again with your hands.

3. Add the wraps flat and push the Mince into the entirety of the wrap as firmly as possible ensuring the Mince mixture isn’t too thick on each one so they are easy to fold after cooked.

4. Heat frypan to medium heat large enough to fit the wrap – do not add Oil or Butter, the lamb will release its beautiful natural fats for you.

5. Place the wrap face down on the pan cooking for about 2-3 minutes until Mince has browned.

6. To flip the wrap, use the largest flat spatula you have and vary carefully and quickly - flip it

7. Cook for a further minute or so then fold in half and half again using the spatula to assist you

8. Pop them all on a plate and serve with an extra sprinkle of Sea Salt if desired, a squeeze of fresh Lemon and Greek Yogurt for dipping
