About this recipe
Lamb neck marinated in yoghurt and ginger-garlic, then braised with browned onion and a paste of fennel, white poppy seed and warm spices (cinnamon, cardamom). The slow cooking turns the gravy silky and the meat fork-tender. A Mughlai-style korma, mild on chilli, deep on aroma.
Korma is the foundational Mughal-era curry, born in the imperial kitchens of Delhi and Agra in the sixteenth century. The defining feature is the gentle, dairy-thickened gravy (yoghurt, cream, ground nuts) and the absence of harsh chilli heat; the Mughal kitchens favoured aromatic complexity over fire. The Persian-Turkic culinary heritage of the Mughal empire shows in every ingredient.
Lamb neck is the underused cut that suits this dish exactly. Cheaper than shoulder, richer than leg, with enough connective tissue to give the gravy body over the slow cook. The fillet (boneless neck) cooks faster and gives a more refined plate; the bone-in version adds more depth at the cost of a longer cook.
White poppy seeds (khus khus, the Indian variety) are the structural thickener and the secret ingredient. Soaked and ground into a paste, they add a creamy body and a faint nutty note that distinguishes a Mughlai korma from a Punjabi one. Substitute cashew paste at a pinch. Fennel seed adds an aromatic licorice note that suits the lamb; black and green cardamom together provide the warm-spice backbone. Serve with naan or basmati, fresh coriander, a wedge of lime.
Ingredients
- 1kg lamb neck fillet cut into pieces
- Marinade
- 200g yoghurt
- 1 tbsp ginger garlic paste
- Salt
- 3g fennel seeds
- 4g white poppy seeds
- 1 piece cinnamon
- 2 pieces black cardamom
- 5 pieces green cardamom
- 3 tbsp olive oil
- 500g brown onion, diced
- 1 tbsp ginger garlic paste
- 1 tsp coriander powder
- 2 green chilli, slices
- 6g Kashmiri chilli powder
- 50g cashew paste
- 30g butter
Method
1. Roti bread
2. 1 bunch coriander
3. Coat the lamb neck fillet with ginger and garlic paste, salt and yoghurt. Cover in plastic wrap and marinate in the fridge overnight.
4. Dry roast the whole spices on low flame for a few minutes until fragrant. Blitz to a powder.
5. Heat the oil in a pan, add onions and cook for a few minutes until they soften. Add ginger garlic paste, green chillies and Kashmiri chilli powder followed by the powdered spices. Cook for another 2 minutes. Add cashew paste and stir through.
6. Add lamb, season with salt, and cook for an hour on low flame or until tender.
7. Stir through butter, check and adjust seasoning and serve with roti bread. Top with coriander to garnish.
