Leftover Chicken Noodle Soup

About this recipe
Scott Pickett's chicken-frame soup. The whole carcass simmered down for an hour or more with leftover veg (potato, carrot, onion, celery), thyme, bay and smashed garlic, until the bones release their gelatin and the stock pulls together with deep amber colour. Noodles go in last; greens at the very end.
The whole-frame method is the proper restaurant trick. Don't pick the meat off first; let the bones and any clinging meat go into the pot together. The connective tissue around the joints releases the most gel; the marrow inside the leg bones throws richness; the skin adds fat for the broth.
Chop the frame into smaller pieces with kitchen shears before simmering so the bones release more surface area to the water. Skim the foam off the top in the first ten minutes; after that, let it bubble gently rather than boil hard, which would emulsify the fat and turn the broth cloudy.
Noodles in for the last five minutes (vermicelli, fresh egg noodles, even spaghetti broken in half), greens in for the last minute. Salt and pepper at the end. A wet Tuesday dinner that earns its keep, and proof that nothing should leave the kitchen unused.
Ingredients
- Frame of a whole chicken already cooked
- Water or chicken stock
- Leftover veggies – potato, carrot, onion, celery – diced into small pieces – approx. handful of each
- Herbs – thyme, bay leaves x 2
- Greens – bok choy, broccolini, whatever is in the fridge
- 2 smashed cloves of garlic
- 6 Button Mushrooms (or any mushies in the fridge)
- Salt & Pepper
- 150-200gm Macaroni pasta
- Olive oil and Extra Virgin OO
Method
1. Remove any remaining meat from the chicken frame and set aside
2. Chop frame into smaller pieces and place in a large pot and cover with water or chicken stock or half/half, and turn onto high heat.
3. Add vegies to pot, in order of cooking time – onion, potato, carrot, celery
4. Add thyme, bay leaves and garlic
5. Bring to a boil, and then turn down to simmer, and skim
6. Add pinch of salt & pepper
7. Cook for 30-40mins
8. Remove the chicken bones (don’t stress if a few small ones in there, just be careful when you are eating)
9. Add pasta and cook for 10-12mins
10. When pasta is cooked, chop your green and add along with shredded chicken meat.
11. Bring back to boil, season to take
12. Serve in bowls, drizzle with EV Olive Oil and sprinkle chopped herbs over the top.
