About this recipe
An Australian twist on Spain's chilled white gazpacho, swapping the traditional almonds for native macadamias soaked into stale sourdough with garlic, sherry vinegar and a slow drizzle of olive oil. Smooth, savoury, ivory-coloured, served as a dip with bread or thinned out with water into a chilled soup.
Ajo blanco is the Andalusian poor-man's gazpacho that predates the tomato version by centuries (the tomato is a New World import; ajo blanco existed in Moorish Spain). The classic version uses Marcona almonds; the macadamia swap here gives the soup a richer, more buttery body that suits the Australian climate and the local nut.
The technique is the same. Soak day-old crustless sourdough in water for half an hour, squeeze it dry, then blitz with toasted nuts, garlic, sherry vinegar, olive oil and water until the mixture goes silky and pale. Strain through a sieve for restaurant smoothness.
Serve cold. As a dip with crusty bread, as a thinned sauce alongside grilled fish or chicken, or as a starter soup garnished with green grapes, sliced cucumber and a drizzle of olive oil. A glass of cold fino sherry alongside if you want to keep it Spanish.
Ingredients
- 75g sourdough bread (crust removed)
- 1 garlic clove, peeled
- 180g macadamia nuts, toasted
- 75ml extra virgin olive oil
- 50ml sherry vinegar
- 200ml water (adjust for consistency)
- Sea salt and freshly ground black pepper, to taste
- Handful of fresh parsley
Method
1. Soften the Bread:
2. Tear the sourdough bread into pieces and soak in water for 30 minutes.
3. Squeeze out the excess water (using a Chux cloth works well) until the bread is just damp.
4. Toast the Macadamia Nuts:
5. Spread the macadamia nuts on a baking tray and toast at 160°C for 6-7 minutes, or until golden and fragrant.
6. Blend the Ajo Blanco:
7. In a Braun chopper or blender, combine the softened bread, garlic, toasted macadamia nuts, sherry vinegar, and water.
8. Add the olive oil, sea salt, and black pepper, then blend until smooth.
9. Add Fresh Parsley:
10. Add parsley to the chopper and blend until finely incorporated into the sauce.
