About this recipe
Costa flat-cap and white-cup mushrooms slow-cooked in butter and olive oil with shallot, garlic and a mix of thyme and marjoram, then blitzed smooth and finished with cream. Earthy, deep, the kind of bowl that pairs with sourdough and one good spoon.
The mushroom soup that gets called classic in French cookbooks (the velute aux champignons) leans on a roux for body; this version skips that and lets the mushrooms themselves do the thickening. Cook them long enough and the cell walls break down, the liquor reduces and the puree comes out silky without flour.
Use two kinds for depth: flat-caps for the earthy backbone, white cups for the milder cream-and-butter side. The dried herbs (rather than fresh) give the soup the soft, autumnal note of long-simmered French country cooking. The vegetable stock keeps it lighter than a chicken or beef base; the splash of sour cream at the end brightens it just enough.
Comfort food without theatrics. Serve with toasted sourdough rubbed with raw garlic, a swirl of olive oil on top, a few thyme leaves. A glass of cold dry sherry alongside if you want to keep it French.
Ingredients
- 50g Butter
- 3 tbsp Olive Oil
- 3 Cloves of garlic, minced
- 3 Shallots, sliced
- 350g Costa Flat cap Mushrooms, sliced
- 350g Costa White cap Mushrooms, sliced
- 1 tbsp dried herbs (mixture of thyme, marjoram)
- 500 mL Vegetable stock
- 1 cup pouring cream
- 4 tbsp Sour cream (substitute for creme fraiche), to serve
- Salt and pepper to taste
- Parsley to garnish
Method
1. Place a medium sized pot over low to medium heat and add in the butter and olive oil
2. Once butter has started to melt, add in the shallots and garlic and saute until softened.
3. Next, add in the mushrooms and herbs and cook until the mushrooms are softened. This should take 5-7 minutes.
4. Once the mushrooms are cooked down, add in the vegetable stock and bring to a boil.
5. Turn the heat to low and add in the full cream and season with a touch of salt and pepper, then simmer for 2 minutes. Turn the heat off and allow to cool slightly before blending into a smooth puree.
6. Before serving, add a dollop of sour cream, drizzle of olive oil. Pinch of pepper and chopped parsley to garnish. Serve warm.
