About this recipe

Smoked paneer crumbled with corn kernels, diced brown onion, curry leaves and a long green chilli, bound in a turmeric-spiced gram flour batter and deep-fried in spoonfuls. Crisp on the outside, soft in the centre, the kind of monsoon snack you eat hot off the spoon. Serve with tamarind chutney.

Pakora (or pakoda, depending on the region) is the broader Indian deep-fried vegetable-fritter family that includes onion bhaji, aloo pakora, palak pakora and a hundred regional variations. The defining feature is the besan (gram flour) batter, which provides a crisp, slightly nutty shell that holds together against the hot oil without absorbing it the way wheat-flour batters do.

Smoked paneer is the modern upgrade on the standard plain paneer. Sourced from Indian grocers or made at home (paneer hung over a smoking pan of wood chips for ten minutes), the smoke adds a savoury, almost bacon-leaning depth that the corn and curry leaves play against perfectly. Crumbled rather than diced so the paneer integrates into the batter rather than sitting in discrete cubes.

Kashmiri chilli powder (mild, deep red, used as much for colour as for heat) gives the pakora its distinctive red-orange tint without overwhelming the dish with chilli heat. Drop spoonfuls of batter into 180-degree oil; turn after ninety seconds; drain on paper. Tamarind chutney for the sweet-sour foil, green coriander chutney for the herbal hit. Chai on the side, a wet afternoon outside, the only acceptable accompaniments.

Ingredients

- 500g smoked paneer, crumbled with hands

- 1 cup corn kernels

- 1 brown onion, diced

- ¼ tsp turmeric powder

- 1 tsp Kashmiri chilli powder

- 2 sprigs curry leaves

- 1 long green chilli, sliced

- For batter

- 1½ cup gram flour

- Salt, to taste

- ¼ tsp turmeric powder

- 1 tsp baking soda

- 150ml water

- Pinch carrom seeds

- Oil, for frying

- Coriander and mint chutney

- 1 bunch coriander

- 1 bunch mint

- 1 lemon, juiced

- ½ tsp sugar

- Pinch salt

- 3 tbsp water

Method

1. Add the paneer, corn kernels, brown onion, turmeric powder, Kashmiri chilli powder, curry leaves and green chilli to a large bowl. Stir all of the ingredients, distributing the spiced and aromates through the mixture.

2. Whisk all of the batter ingredients in a separate bowl until it comes together as a smooth batter. Pour the batter over the cheese mixture and stir through, this batter will help to bind the ingredients.

3. Heat vegetable oil in a large wok to 180C. Carefully drop 1 tablespoon of the pakora mixture into the oil, deep fry in batches for 5 minutes or until golden brown. Continue until all of the pakora mixture is fried. Set aside on a paper towel to drain any excess oil.

4. Blitz all of the ingredients for the coriander and mint chutney until smooth. Taste and adjust the seasoning. Pour into your serving bowl.

5. Stack the pakoras onto your serving bowl and serve with the coriander and mint chutney.
