Peanut Caramel Slice
With
Steph De Sousa

Ingredients
250g unsalted butter, plus 1 tbsp extra
2 cups white sugar
1/2 cup evaporated milk
2 cups salted peanuts, plus 1/2 cup extra
250g milk chocolate bits
Method
In a saucepan, add evaporated milk, sugar, and 250g butter. Pop it on medium heat and stir until the butter melts and the sugar dissolves.
Bring it to a gentle boil — bubbling but not crazy! Keep it like that for 10 minutes, stirring every minute so it doesn't burn.
When it turns a lovely dark caramel colour, take it off the heat and stir through 2 cups of peanuts.
Pour into a lined slice tin and spread it right to the edges.
Melt chocolate bits and 1 tbsp of butter together in the microwave for about 1.5 minutes, whisk till smooth, then pour over the caramel layer.
Gently spread it out and sprinkle with the extra peanuts for crunch.
Pop it in the fridge for a few hours until set.
Slice into squares and serve.

Steph De Sousa
Steph De Sousa cooks as The Frugal Foodie, building recipes around what's already in the pantry and the produce nobody wants to throw out. Her style is straightforward and budget-aware without being austere: roast vegetable peelings, second-day rice, a freezer worked properly. She brings practical home rhythms to Savour and Wander.
