About this recipe
Quails marinated twice and wrapped in banana leaves with shredded mint, then dum-cooked so the steam carries the spice through the meat. A Lucknowi technique built for game birds, the leaves doing the work of a sealed pot. Tear them open at the table.
Dum bater (literally steamed quail) sits in the Lucknowi Awadhi repertoire of small-bird cookery developed by the Nawabi royal kitchens of the eighteenth and nineteenth centuries. The Nawabi cooks were obsessed with refinement and gentle handling: small birds (quail, partridge, dove) suited their aesthetic in a way that the heavier goat and lamb of the broader North Indian table couldn't quite match.
The double-marinade is the foundational technique. The first marinade (turmeric, chilli, ginger-garlic, salt) tenderises and seasons the surface; the second marinade (toasted ground spices, yoghurt, kasuri methi, ground cashew) layers the deeper aromatic complexity. The pause between marinades (at least an hour, ideally overnight) lets each layer penetrate to its appropriate depth.
Banana leaves act as the dum vessel here, substituting for the traditional sealed-lid pot. The leaves trap the steam and keep the spice aromatics circulating around the quail throughout the cook; the leaves themselves contribute a faint vegetal, almost grassy fragrance that perfumes the meat. Shredded fresh mint inside the parcel adds a cooling, herbal note. Tie the parcels with kitchen string, steam in a heavy pot or oven for forty minutes. Open at the table; each guest unwraps their own bird. Naan or pulao on the side.
