Roasted Cauliflower with Green olives, Macadamias & Sultanas

About this recipe

Scott Pickett halves a whole cauliflower through the stem into thick steaks and roasts them in butter until the edges char and the centre softens through. Green olives and toasted macadamias added at the end for salt and crunch; sultanas for a touch of sweetness. A side that holds its own as a main.

The steak approach (cutting the cauliflower with the stem intact so each piece stays in one slab) is the same trick that turned broccoli into a restaurant centrepiece. The cauliflower flesh holds together for handling and the cut sides bronze hard against the pan.

Start in an oven-proof fry pan cut-side down in a generous slick of olive oil and a knob of butter; the butter starts to brown after a few minutes and bastes the cauliflower with a nutty depth. Transfer to a hot oven (180 to 200) for ten minutes until the centre softens to a butter-knife test.

Green olives (the meaty Spanish queens or Sicilian Castelvetranos rather than the small French Lucques) for salt; capers for brine; macadamias for the Australian sweet-nut note. A handful of sultanas plumped in warm water, a squeeze of lemon, chopped parsley and chives. Anchovy is the optional umami upgrade. Served warm or at room temperature.

Ingredients

- 1 Cauliflower

- 150 Macadamia ( or pinenuts, almonds etc )

- 100 grams Raisins, sultans etc

- Sprig Parsley, chives

- 100 grams Butter

- 50 grams Capers

- 100 grams green Olives

- ( anchovy, optional)

- 1 Lemon

Method

1. Cut Cauliflower into steaks leaving root and stem in tact

2. Place some olive oil in an oven-proof fry pan, cut size down

3. Season with Salt & Pepper

4. Place in pre-heated oven at 180-200C for 8-10mins, or until lots of great colour, turning halfway through the cooking time.

5. When nicely browned, remove from oven, place cauliflower onto a serving plate.

6. Use same pan & juices to make the vinaigrette

7. Add the butter, then a handful of macadamias and toast.

8. Add other nuts eg./ pinenuts, almonds or hazelnuts, and stir through

9. Add chopped olives if you have them

10. Butter should be sizzling and starting to brown but not burn

11. Add capers

12. Keep stirring after you add each item

13. Chop 4-5 anchovies and add

14. Add chopped herbs

15. Season with salt, pepper & lemon zest

16. Add more butter and/or Olive Oil if the vinaigrette starts to dry out

17. Finish with a good squeeze of lemon juice

18. Dress the Cauliflower with the vinaigrette and serve as a side for a shared table or as a main meal for a vegetarian.
