About this recipe

Silvia Colloca's rockmelon broken down with lemon, sugar, bay leaves and white pepper until the fruit collapses into a savoury-sweet jam. The pepper bites; the bay perfumes; the melon stays unmistakable underneath. Spoon over cheese boards or stir into yoghurt.

The Italian tradition of savoury fruit jams (mostarda, the Lombard preserves with mustard and candied fruit; cotognata, the Sicilian quince paste) is the broader category this sits in. Rockmelon is the modern Australian-Italian adaptation; the Italian original would more likely use figs, quinces or stone fruit.

White pepper is the unexpected ingredient that lifts this from sweet jam to savoury condiment. Where black pepper would dominate with its biting hot note, white pepper sits gentler and more floral, providing a slow-building warmth that pairs beautifully with the rockmelon's sweetness and the bay's herbal depth. Use freshly ground from the whole peppercorn rather than pre-ground (which loses its volatile oils within weeks of grinding).

The lemon juice is the pectin source. Rockmelon has very little natural pectin (the carbohydrate that makes jams set); the lemon's high acid content provides both the gelling agent and the brightness that balances the sugar. Simmer for 45 minutes to an hour until the jam reaches setting point (a small spoonful on a chilled plate should wrinkle when pushed with a finger). Bottle hot into sterilised jars; keeps for six months unopened, two weeks once opened in the fridge. Pairs with hard sheep's-milk cheeses, prosciutto, or stirred into Greek yoghurt.

Ingredients

- 4x 250 ml glass jars

- 1 kg rockmelon, peeled and cut into chunks

- Juice of 1 lemon

- 150 ml freshly squeezed lemon juice

- 500 g caster sugar

- 3–4 bay leaves

- 1 ½ teaspoon freshly ground white pepper

- Cheese for serving.

Method

1. Cut your rockmelon in to chunks. Combine the rockmelon, lemon juice, caster sugar and bay leaves in a large saucepan over medium heat and bring to a simmer. Reduce the heat to low and cook, skimming any impurities from the surface, stirring occasionally and crushing the fruit with the back of the spoon, for 40–50 minutes until slightly thickened.

2. To sterilise jars, clean in soapy water. Place jars and lids in a deep saucepan over high heat. Cover with cold water. Bring to the boil. Reduce heat to medium and boil for 20 minutes. Carefully remove the jars and place on the bench on a tea towel. Allow to air-dry or pat dry with clean paper towel.

3. To check if the jam is cooked, place a small plate in the freezer for 10 minutes. Drop 1 teaspoon of jam onto plate. Let it set for 30 seconds, if it thickens and wrinkles when pushed with your fingertip, the jam is ready. If not, cook for a further 5 minutes and test again.

4. Once the jam is ready remove it from the heat and add in your white pepper.

5. Pour the hot jam into the sterilised jars, secure the lids, closing firmly, and tip the jars upside down to create a vacuum. Allow to cool down inverted.

6. Store in the pantry for up to 3 months. Once opened, store in the fridge for 10 days.
