About this recipe
Earthy Puy lentils simmered until they hold their shape, snap-fresh green beans blanched bright, shaved fennel for crunch, all tossed with creamy Riverina fetta, black olives and walnuts. White tahini and lemon dressing pull it together; the textures stay distinct in the bowl. A summer lunch salad with weight enough to stand alone.
Puy lentils (lentilles du Puy, the small slate-green French lentils grown in the volcanic soil of the Auvergne) are the only lentils that hold their shape through a proper cook. Twenty minutes in well-salted water leaves the centres still slightly firm and gives a textural bite that the cheaper brown lentils can't deliver.
The white tahini dressing is the upgrade. Where most green-salad dressings lean on olive oil and lemon, this one builds on a base of nutty tahini whisked thin with lemon juice and water; the result reads as richer and more substantial than a vinaigrette, suited to the lentils and the fetta.
The fennel goes in raw, shaved paper-thin on a mandolin or a sharp knife. The anise note pairs with the walnuts and the olives in a Sicilian-leaning direction; the fennel fronds reserved from the bulb get torn over the top as a herb. Toast the walnuts in a dry pan first to wake them up; black olives roasted briefly bring a sweet-savoury concentrated edge. Serve at room temperature. A glass of cold Chablis or a dry Provencal rose alongside.
Ingredients
- ½ cup (110g) Puy-style lentils
- 1 tablespoon extra virgin olive oil
- 250g green beans, trimmed and cut diagonally
- 1 small fennel bulb, cut into thin wedges, fronds reserved
- 100g white tahini
- ½ cup black olives, roasted if desired
- 80g Riverina Dairy High Protein Fetta
- ½ cup dill leaves
- ½ cup flat-leaf parsley leaves
- 1 handful rocket
- ½ cup (50g) walnuts, toasted
- 1 quantity Lemon Dressing for Green Bean Salad (see recipe below)
Method
1. Rinse the lentils under cold water, then place them in a medium saucepan and cover with plenty of water. Bring to the boil, reduce the heat to medium and simmer for 20 minutes, or until tender but still holding their shape. Drain well, rinse briefly and leave to drain thoroughly. Transfer to a bowl, drizzle with the olive oil, season lightly and set aside.
2. Meanwhile, bring a saucepan of well-salted water to the boil and prepare a large bowl of iced water. Add the green beans to the boiling water and cook for 2 minutes, or until just tender. Drain immediately and plunge into the iced water to stop the cooking. Drain well and set aside.
3. Toast the walnuts in a dry frying pan over medium heat for 3–4 minutes, or in a 180°C oven for 6–8 minutes, until lightly golden and fragrant. Set aside to cool.
4. Spread the tahini over the base of a wide serving plate or shallow bowl.
5. In a large bowl, combine the lentils, green beans, fennel, olives, dill, parsley and rocket. Spoon over enough of the lemon dressing to lightly coat the salad and toss gently to combine.
6. Pile the salad over the tahini. Crumble over the Riverina Dairy High Protein Fetta, scatter with the toasted walnuts and finish with the reserved fennel fronds.
7. Drizzle with a little extra dressing and serve immediately.
