About this recipe
Justine Schofield's sausage roll filling stuffed with grated carrot and zucchini, rolled into puff pastry scrolls and baked until the pastry turns deep gold and the bottoms crisp. Australian bakery food, with the vegetables hidden inside so they get eaten without negotiation. Tomato sauce alongside.
The Australian sausage roll has lived in every bakery counter and lamington-drive cake stall since the post-war years, the British meat-pastry tradition transposed onto the Anzac convenience-food landscape. The traditional version uses straight sausage mince and puff pastry; the modern home-cook upgrade pulls the sausage out of its casings and adds finely-grated vegetables for both nutrition and moisture, producing a juicier, more vegetable-forward final scroll.
The grated-vegetable trick is the parenting move worth importing into adult cooking. Carrot and zucchini grated fine on a box grater, then squeezed dry in a clean tea towel to remove the water, fold into the seasoned mince without altering the savoury sausage-roll flavour. Kids who refuse vegetables on a plate happily eat them when concealed inside familiar pastry.
The scroll shape (rather than the traditional log-and-slice technique) is the modern Australian café format that has spread from Melbourne brunch spots into home kitchens. The pastry rolled into a single long log with the filling spread evenly inside, then cut into 2cm rounds and laid flat in the baking tray. The scrolls bake faster than logs (around twenty-five minutes at 190 degrees) and the cross-section displays the spiral of filling and pastry on the plate. Tomato sauce on the side; eaten standing at the bench.
Ingredients
- 1 packet of Specially Selected gourmet Beef Sausages
- 2 pieces Elmsbury Puff Pastry – partially thawed
- 1 The Good Stuff small Carrot
- 1 The Good Stuff small Zucchini
- 1 tbsp Stone Mill crushed Garlic
- 1 tsp Stone Mill Smoked Paprika
- 1 tsp Stone Mill Salt
- ½ tsp Stine Mill Pepper
- Colway BBQ or Tomato Sauce
- Large handful of Westacre grated Mexican Cheese
- Confidence Paper Towel
Method
1. Pre heat oven to 190 degrees
2. Remove Sausage casings, placing the Mince into a bowl
3. Add Garlic, Smoked Paprika, Salt and Pepper.
4. Grate the Zucchini and Carrot, place in the bowl with the Sausage mince and mash with a fork to combine ( could use food processor)
5. Place the two Puff Pastry sheets next to one another slightly overlapping – push down with a fork vertically from top to bottom where overlapping to connect the two sheets
6. Cover the entire surface of the Pastry in the Mince and Vegetable mix gently pushing down.
7. Sprinkle the Cheese over the meat.
8. Roll the pastry up firmly, horizontally from one end to the other until completely rolled up and into the shape of a log then pop in the freezer for 10-15 minutes if the pastry is too soft.
9. Slice eight Ccrolls using a sharp knife cutting from top to bottom, placing each scroll on a baking tray (if cutting is proving messy, you can optionally freeze the log slightly beforehand)
10. Bake for 20-25 minutes until pastry is golden and cooked through
