About this recipe
Chorizo rendered until the paprika oil pools red, then rice toasted in the same pan with garlic, capsicum and tomato before chicken stock goes in. The rice drinks the chorizo fat as it cooks. A one-pan Spanish weeknight dish, somewhere between paella and pilaf.
The Spanish chorizo (distinct from the Mexican fresh chorizo that is sold as raw sausage meat) is the cured, smoked, paprika-rich pork sausage that has lived in every Spanish home kitchen for centuries. Sliced into rounds and rendered hard at the start of a dish, the chorizo releases its smoked-paprika-flavoured fat into the cooking medium; the resulting orange-red oil flavours everything else that goes into the pan.
The rice-toast technique is the foundational paella-pilaf move. Short-grain or medium-grain rice added to the chorizo fat before any liquid joins, stirred for two to three minutes until the grains turn translucent at the edges. The toast separates each grain, prevents stickiness, and infuses the starch with the chorizo oil so the resulting cooked rice is seasoned from the inside out.
This dish sits between a true paella (which uses bomba rice, saffron, and a wide flat pan to develop the socarrat crust) and a true pilaf (which uses basmati rice and Persian techniques). The Spanish home version uses whatever short-grain rice is available, no saffron requirement, in a regular saucepan rather than a paella pan. Smoked paprika in the cook, sweet corn kernels cut from a fresh cob, chopped capsicum and tomato for body, chicken stock as the cooking liquid. Spring onion and parsley over the top to finish.
Ingredients
- 1 x Berg Chorizo Sausage (about 125gm)
- 1 tbsp The Olive Tree Olive Oil
- 2 garlic Cloves
- 1 small Red Onion
- 1 small Capsicum
- ½ bunch Spring Onions
- 3 tbsp Stone Mill Smoked Paprika
- 1 cob Corn
- 2 cups Chefs’ Cupboard Chicken Stock
- 1 400gm tin Remano diced Tomatoes
- 1 1/2 cup Imperial Grain White Rice
- Stone Mill Salt and Black pepper to taste
Method
1. Dice the Chorizo and fry it off in a frypan on medium-high heat.
2. As the Chorizo is frying, chop the Onion and add it to the pan. Give it a little stir so they mix well.
3. Now, remove the core of the Capsicum and chop them into little chunks and add it to the frypan. Stir well. If the pan is too hot, turn the heat down.
4. Chop the Green Onions, add it to the frying pan and give it a stir.
5. Finally, slice off the Corn from the Cob (use the leftovers for a Veggie Stock) and add the Corn Kernels to the frypan with the other ingredients and give it another stir to mix it all up.
6. Now, let’s add some flavour with some crushed Garlic and Smoked Paprika. Stir it all together and cook it for a couple of minutes.
7. Then add the diced Tomatoes and Chicken Stock.
8. Finally, stir in the rice, allow it to simmer and pop the lid on. Let it cook for 20 mins.
9. Another option is to pop it in the over for 20-25 mins with the lid on at 180 degrees.
10. Once cooked, check the seasoning and add Salt if required and serve.
