Ingredients
For the Gnocchi: 500g potato gnocchi
1 x 200g punnet cherry tomatoes
300ml thickened cream
1 cup water
1 tbsp tomato paste
1 small brown onion, finely chopped
2 tsp crushed garlic
Drizzle of olive oil
1 tbsp salted butter
Salt and pepper, to taste
1 cup pizza shredded cheese
1 bunch of fresh basil
Method
Heat a skillet on the stovetop on a medium heat with a drizzle of olive oil and a tablespoon of butter.
Finely dice onion.
Sauté the cherry tomatoes and onion until softened and translucent.
Add in the garlic sauteing briefly then pour in the tomato paste, gnocchi, thickened cream and water.
Stir altogether and gently simmer for 5–8 minutes, until gnocchi are cooked through, and the sauce has thickened.
Give it another stir then add in a handful of cheese and basil and remove from the heat.
Stir again.
Serve gnocchi warm with salad on the side.

Steph De Sousa
Steph De Sousa cooks as The Frugal Foodie, building recipes around what's already in the pantry and the produce nobody wants to throw out. Her style is straightforward and budget-aware without being austere: roast vegetable peelings, second-day rice, a freezer worked properly. She brings practical home rhythms to Savour and Wander.
