SERVES
8

Ingredients
1/2 cup Sushi Rice
1 x 400g tin Premium Red Salmon, drained
4 green onions, sliced
1 pack Nori Seaweed Sheets (3 sheets crushed)
1 tbsp Colway Authentic Mayonnaise
1 tbsp Chefs' Cupboard Beef Flavour Stock Powder
1 cup Plain Flour
1/2 cup Panko Breadcrumbs
2 Eggs
Method
In a bowl, mix together drained salmon, sliced green onions and 3 crushed Nori sheets.
Cook the rice as per packet instructions.
Add beef stock powder and mayonnaise to the bowl and mix well.
When combined, roll the mixture into 8 individual patties.
Place foil on your board to make a crumbing station, cracking eggs into a bowl and whisk.
Pour flour onto one side of the foil and breadcrumbs on the other side.
Roll patties in flour, then dip into egg, then roll in panko.
Create a well in the middle of the foil for your eggs and roll it up to avoid a messy clean up.
Place a disposable liner in the air fryer, place the 8 patties in and air fry for 12 mins on 200C, flipping halfway through.
Serve on a plate with a squeeze of lemon.

Steph De Sousa
Steph De Sousa cooks as The Frugal Foodie, building recipes around what's already in the pantry and the produce nobody wants to throw out. Her style is straightforward and budget-aware without being austere: roast vegetable peelings, second-day rice, a freezer worked properly. She brings practical home rhythms to Savour and Wander.
