About this recipe
The dal that anchors a thousand Indian dinners. Yellow split peas slow-cooked into silky comfort with shallots, ginger, garlic, green chillies, tomatoes, turmeric and chilli powder, then finished with a hot tadka (the ghee-based tempering that releases the spices in a final aromatic hit at the end).
Tadka dal is the everyday North Indian household dal, distinct from the buttery, slow-cooked dal makhani of restaurant menus. Yellow split peas (toor dal or chana dal) cook in about an hour into a soft, golden, mildly textured stew. The cooking is patient but undemanding; the dal sits on the back of the stove and minds itself.
The tadka is the technique that separates a great dal from a flat one. Heat ghee in a small frying pan, drop in cumin seeds until they bloom and pop, add mustard seeds, curry leaves, a slit green chilli, a clove of crushed garlic. The fat takes on all the aromatics in seconds; pour the whole pan over the cooked dal at the table, letting it crackle as it hits the surface.
Serve with steamed basmati and a soft chapati for tearing. A spoon of plain yoghurt on the side cools the heat; a small dish of lime pickle adds salt and tang. The household dinner that travels the entire subcontinent.
Ingredients
- 1 tbsp ghee
- 3 shallots, diced
- 1 inch grated ginger
- 3 garlic cloves, minced
- 2 green chillies, chopped
- 2 medium sized tomatoes, chopped
- ½ teaspoon ground turmeric
- ½ teaspoon chilli powder
- 1 litre of water
- 1 ½ cups yellow split peas, rinsed
- Salt to taste
- 1 tablespoon ghee
- 3 sprigs of curry leaves
- ¼ teaspoon asafoetida
- 1 tsp cumin seeds
- 1 teaspoon ground coriander
- ¼ teaspoon garam masala
- 1 teaspoon black mustard seeds
- 4 dried red chillies
Method
1. Heat a large pot on medium heat. Add the ghee, shallots, ginger, garlic and green chillies and saute for 2-3 minutes. Add in the chopped tomatoes and mix through.
2. Add the rest of the ingredients into the pot and allow to simmer for 30-40 mins or until the lentils are cooked through.
3. Just before the lentils are cooked, heat a frying pan on medium heat and add in the ghee and curry leaves. Add in the other ingredients for tempering and fry for a couple of minutes. Remove from heat and pour the hot tadka into the dal. Check the seasoning before serving with some pappadums and basmati rice.
