Spicy Vodka Spaghetti

About this recipe
Ingredients
250g spaghetti pasta
2 brown onions, diced
3 cloves garlic
300ml cream
25g unsalted butter
400g crushed tinned tomato
100ml vodka
50g chilli paste
Shaved parmesan to serve
Method
Boil pasta in heavily salted water until al dente.
In a separate large pan, melt the butter and add onions and garlic. Sweat down until translucent.
Add vodka to pan and simmer until reduced.
Add chilli paste and tomatoes and stir well.
Add cream and bring to the boil and cook for 5 minutes.
Add cooked pasta to sauce and cook for a further 5 minutes.
Serve with shaved parmesan.
